Quick And Easy Salmon Patties

One of the best canned goods that you can store in your pantry is canned salmon. It’s very versatile and can be used as ingredient in many healthy recipes. Salmon is packed with healthy goodness of protein that’s good for building the muscles and omega-3 fatty acids that are good for the heart, hair, and skin.

Canned salmon also has calcium from the soft bones. Canned salmon however also contains the fish’s skin. Remove the skin of the canned salmon as this is where toxins in fish are mostly stored.

Makes 4 patties

Ingredients:

• 1 7.5 ounce can red salmon, drained
• 1/4 cup finely diced onion
• 1/4 cup finely diced red pepper
• 1 Tablespoon chopped fresh parsley
• 1 egg
• 1/2 cup fresh whole wheat bread crumbs
• 1 teaspoon olive oil for frying

Instructions:

Place drained salmon in a bowl and mash with a fork. Be sure to remove the skin of the canned salmon. You can leave the bones as these contain calcium.

Mix with onion, red pepper, parsley, egg, and crumbs. Make your own fresh crumbs from a slice of whole wheat. Choose whole wheat bread that’s soft for this recipe. It will give the recipe extra fiber. Remove the crust and make some crumbs with a mini food processor. If you don’t have one, you can just chop the bread really fine with a knife.

Shape into four patties.

Heat oil in a pan over medium heat and cook patties for about 5 minutes until browned and cooked through, turning once.

Serve and enjoy!
