Don’t we all love and crave cheese? But for those who are on a healthy diet, regular cheese might not be a good idea. Here’s another way to satisfy your cravings. We are going to make a vegan almond cheese that is both healthy and tasty!

Ingredients:

• 2 cups raw almonds (peels removed and soaked for 24-48 hours)
• 1 cup water
• 1/4 teaspoon probiotic powder
• 1 tbsp pine nuts (chopped)
• 1 tbsp red onion (finely chopped)
• 1 teaspoon green onion (finely minced)
• 1 teaspoon garlic (crushed)
• 1 tbsp fresh parsley (finely chopped)
• Pepper
• 2 teaspoon yellow miso

Instructions:

It is recommended to use spring or filtered water.

Rinse the raw almonds every 12 hours and replace the water.
Place the raw almonds, water and probiotic powder inside the blender.
Blend all until the texture looks smooth and shiny.
Prepare the strainer and put mesh cloth on it.
Pour the almond cheese on it.
Wrap the mesh cloth over the almond cheese and make sure it is contained.
Put some weight on it to remove excess liquid.
Leave it for 8-12 hours.
Remove the mesh cloth.
Transfer to a bowl.
Add all other ingredients in the bowl.
Mix well.
It can be stored in the fridge for 4-5 days.

Tips and ideas:

You can make an almond cheese snack bite by spreading the cheese on any green leaf, put in some sprouts, and wrap the leaf around.
