Salmon En Croute Recipe

Salmon En Croute is a French classic dish that usually served on special occasions. The word “croute” means “crust”, so it means “salmon in a crust.” This is an attention-stealer main course especially that it is at the centerpiece of every party.

Ingredients:

• 11 oz skinless fillet salmon
• 2 eggs (beaten)
• 30 grams fresh basil leaves
• 25 grams pecorino cheese
• 150 grams cream cheese
• 130 grams fresh spinach
• 4 cloves garlic (diced)
• 1/2 small red onion (finely diced)
• Olive oil
• Salt and ground black pepper to taste
• Plain flour
• Frozen puff pastry (thawed)

Instructions:

For the basil sauce:
Prepare a blender.
Put fresh basil leaves and 2 cloves of garlic in.
Blend well.
While pulsing, pour olive oil gradually.
Add pecorino cheese, salt, and ground black pepper to taste.
Pulse again until texture is smooth.
Transfer to a bowl.
Mix with cream cheese.
Set aside.

For the spinach:
Set pan over medium heat.
Pour olive oil.
Saute diced onions for 5 minutes or until caramelized.
Add fresh spinach leaves and diced garlic cloves.
Stir it until well cooked.
Remove from the heat.
Transfer to a separate bowl.
Let it cool and set aside.

For the salmon:
Preheat oven to 400 F.
On a clean surface, dust with plain flour.
Lay the puff pastry.
Place the spinach first.
Next, place the salmon on top of it.
Then spread the basil sauce on top of the salmon.
Top it off with spinach again.
Lightly brush the puff pastry with egg mixture.
Season with salt and ground black pepper to taste.
Wrap the salmon with the pastry.
Place into a baking sheet.
Brush the exposed pastry with egg mixture.
Sprinkle salt.
Bake for 25-30 minutes or until golden brown.
Remove and slice into pieces.
Pour basil sauce over it.
Transfer to a plate and serve!

Tips and ideas:

Serve with pan-fried potatoes, vegetable or fruit salad on the side.

You can also make a spicy dip if you want another flavor.
