Skillet Roasted Potatoes Recipe – Laura Vitale

With over 4000 varieties in different colors, shapes, sizes, textures, and tastes, the potato has long been a staple food in many parts of the world. These starchy tubers are grown in all 50 states of the USA and in about 125 countries throughout the world. Potato is also the first ever vegetable to be grown in space. It contains more potassium than banana. Potato is also an excellent source of vitamins C, B6 and B3, copper, manganese, phosphorous, and fiber. It is also fat and gluten free.

There are countless ways to cook potatoes but today, we are giving you a simpler way to roast potatoes without using an oven. This is a perfect side dish to any meal. Bite into that well-seasoned golden brown crispy crust with a perfectly cooked and fluffy flesh.

Ingredients:

This recipe takes about 25 to 30 minutes to make. Serves 4 to 5.

• 10 Yukon gold potatoes, cut into halves
• 1 tbsp rosemary, chopped
• 5 cloves of garlic, minced
• 1 1/2 tbsp vegetable oil
• salt
• fresh ground black pepper

Instructions:

Place potatoes on a microwave-safe dish.
Partially cook in the microwave for 10 minutes.
Preheat a cast iron skillet over medium-high heat for 5 minutes.
Pour vegetable oil and add potatoes.
Immediately reduce the temperature to medium heat.
Roast until the potatoes are fully cooked through with deep golden brown and crispy skin. Make sure to constantly turn the potatoes to get even browning. This will take about 10 minutes.
Add garlic, rosemary, salt, and pepper. Stir-fry for about a minute.
Turn off heat.
Transfer roasted potatoes to a serving dish and serve.

Ideas And Tips:

• Any type of baby or new potato may be the best substitute for this recipe. Aside from the smaller size which will lessen your cooking time, they are also sweet, firm, creamy and very waxy. Other potato varieties that you can use are russet (though watch out for GMO “White Russet” potations that may not be labeled as such!), red bliss, fingerling, Carola, Inca gold, purple viking, Kennebec or Desiree.

• You may also boil the potatoes to help them sear well when you roast them in the skillet. Just make sure you drain them completely before roasting.
