Spicy Tuna Rice Bowl

Prepare this super-flavorful spicy tuna rice bowl for lunch or dinner. Mix fluffy rice with shredded tuna, bell peppers, and your favorite hot sauce! This recipe takes about 40 minutes.

Ingredients:

• 1 cup whole grain rice
• 1.5 cups fresh water
• 1 jar tuna in olive oil
• 1/2 cup red bell pepper (finely diced)
• 1/4 cup jalapeno pepper (finely diced)
• 1/4 cup green onions (finely sliced)
• 1/3 cup seasoned rice vinegar
• 2 tbsp soy sauce
• 1/2 tsp sesame oil
• 2 tsp sriracha hot sauce
• juice of 1/2 lemon
• some sliced green onions (optional for garnishing)
• sprinkle of Korean red pepper flakes (optional for garnishing)

Instructions:

Place a cup of whole-grain rice in a pot.
Pour 1.5 cups of freshwater.
Set it over medium-high heat.
Let it simmer.
Once it starts to simmer, cover the pot and reduce to low heat.
Let it simmer for 15 minutes.

Meanwhile, make the tuna mixture.
Add a jar of tuna into a bowl.
Shred into smaller pieces.
Add finely diced red bell pepper and jalapeno pepper.
Add finely sliced green onions.
Pour seasoned rice vinegar.
Drizzle with soy sauce, sesame oil, sriracha, and juice of a lemon.
Mix well.
Set aside.

After 15 minutes, switch off the heat for the whole grain rice.
Leave it covered for 10 minutes and let cool.
After 10 minutes, uncover the pot.
Fluff the rice using a fork and transfer it into the tuna mixture.
Mix well to combine.
Garnish with Korean red pepper flakes and finely sliced green onions.
Serve and enjoy!
