Best Baked Ziti Ever

Baked ziti is an Italian casserole that combines ziti pasta into a tomato-based sauce and cheese mixture. The cheese mix can be a combination of parmesan, mozzarella and ricotta. The tomato-based sauce is a flavorful mixture of ground beef, onions, mushrooms and seasonings. This recipe takes about an hour to prepare and cook. It serves eight people.

Ingredients:

• 1 lb ziti pasta (uncooked)

Meat Sauce:

• 2 tsp extra virgin olive oil
• 1 lb lean ground beef
• 1 large white onion (diced)
• 8 oz mushrooms (sliced)
• 1 x 6 oz can tomato paste
• 5 cloves garlic (minced)
• 28 oz crushed tomatoes
• 15 oz tomato sauce
• 1 tbsp dried basil
• 1 tbsp dried oregano
• 1/2 tsp salt
• 1/4 tsp black pepper

Cheese Mix:

• 8 oz cream cheese (softened)
• 8 oz whole milk ricotta cheese
• 1 cup parmesan cheese (freshly grated)

Instructions:

Preheat oven to 350 F.

Meat Sauce:

Set a large pot over medium-high heat.
Add extra virgin olive oil and heat it.
Add lean ground beef.
Stir and cook for 5-7 minutes or until browned.
Add diced white onion and sliced mushrooms.
Stir and cook for 5-7 minutes or until onions and mushrooms are soft.
Add tomato paste and minced garlic.
Stir to combine.
Pour crushed tomatoes and tomato sauce into the pot.
Season with dried basil, dried oregano, salt and black pepper.
Stir to combine.
Let it simmer.
Once it simmers, reduce to low heat.
Cover the lid and continue to simmer while cooking the ziti pasta.

Cook the ziti pasta according to the package instructions.
Once done, drain the water and set the pasta aside.

Remove the sauce from the heat and set aside.

Cheese Mix:

Meanwhile, prepare the cheese mix.
In a bowl, add softened cream cheese.
Add whole milk ricotta cheese and freshly grated parmesan cheese.
Mix well.
Set aside.

Assembly:

Prepare a 9 x 13-inch baking dish.
Add the cooked ziti pasta into the dish.
Pour the meat sauce.
Mix well to coat the pasta.
Spread to distribute evenly in the dish.
Top it off with the cheese mix.
Spread to distribute.
Place it inside the preheated oven.
Let it bake for 20 minutes.
Once done, remove from the oven.
Serve and enjoy!

Tips and ideas:

You can skip adding mushrooms if you don’t like mushrooms.

You can garnish with finely chopped parsley on top.

How to Make Perfect Beef Wellington

Beef Wellington is a savory dish that originated from the United Kingdom. It is a steak or a tenderloin wrapped in a pastry sheet and baked according to your preferred doneness. It is usually served with mashed or roast potatoes and mixed veggies. It is a perfect dinner dish especially for parties and other events.

Ingredients:

For The Beef:

• 1 1/2 lbs chateaubriand or center-cut tenderloin (2 1/2 inches thick)
• 3 tbsp olive oil
• salt to taste
• pepper to taste
• some dijon mustard

Mushrooms Mixture:

• 1 lb mushrooms (finely chopped)
• 2 shallots (finely chopped)
• 3 garlic cloves (finely chopped)
• 2 tbsp olive oil
• salt to taste
• 3 tbsp whiskey
• 2 thyme sprigs

Crepes:

• 3 1/2 tbsp all-purpose floor
• 1 egg
• 140 ml whole milk
• a pinch of salt
• 1 tbsp butter

Other Ingredients:

• 5-6 prosciutto slices
• 1 puff pastry sheet
• egg wash
• some flaky salt to taste

Instructions:

Set aside 1 1/2 lbs chateaubriand or center-cut tenderloin at room temperature.

Mushrooms Mixture:

Prepare a frying pan.
Add finely chopped shallots and garlic into the pan.
Drizzle with 2 tbsp of olive oil.
Set the pan over medium heat.
Saute until onions are soft.
Add finely chopped mushrooms.
Season with salt to taste.
Stir and cook for 5-8 minutes.
Add 3 tbsp of whiskey and thyme sprigs.
Stir and cook.
Let it simmer for 2 minutes or until liquid has reduced.
Once done, remove from the heat and transfer to a plate.
Set aside.

Pat dry the center-cut tenderloin set aside earlier.
Season all sides with salt and pepper.
Set a large skillet over medium-high heat.
Add 3 tbsp of olive oil and let it heat.
Once heated, add the seasoned tenderloin to the skillet.
Sear the sides for 1-2 minutes.
Once done, remove from the skillet and transfer to a plate.
While it’s still hot, brush all sides with dijon mustard.
Set aside and let it cool at room temperature.

Crepes:

In a mixing bowl, add 3 1/2 tbsp of all-purpose flour.
Pour 140 ml of whole milk and an egg.
Season with a pinch of salt.
Whisk until batter is well combined.

Set a non-stick medium frying pan over medium heat.
Add 1 tbsp of butter and let it melt.
Add a thin layer of the batter into the pan.
Swirl it to spread on the bottom of the pan.
Cook for 1-2 minutes.
Flip and cook the other side for 45 seconds to a minute.
Once done, remove from the pan and transfer to a plate.
Do the same with the rest of the batter.
It should make 2-3 crepes.

Assembly:

Lay two crepes on a work surface, overlapping in the middle part.
Place 5-6 prosciutto slices on the base.
Add the mushrooms mixture and spread over the prosciutto layer.
Add the tenderloin at the base of the mushrooms mixture.
Roll up the crepe until the prosciutto, mushrooms, and tenderloin are wrapped in the crepe.
Wrap it tightly with clingfilm.
Put it inside the fridge and chill for 30 minutes to an hour.

Preheat oven to 425 F.

Flatten a puff pastry sheet until it is 1/8-inch thick.
Brush egg wash on the surface of the puff pastry.
Place the wellington crepe at the base of the pastry.
Slowly roll it up until the wellington is wrapped with the pastry sheet, then cut off excess.
Pinch the edges to seal and cut off excess.
Place it on a parchment-lined baking tray.
Brush with egg wash.
Sprinkle with some salt.
Place it inside the preheated oven.
Bake until crust is golden brown.
Once done, remove from the oven and transfer to a plate.
Let it cool for 10 minutes.
Slice into equal portions.
Serve and enjoy!

Tips and ideas:

This recipe results in a golden-brown crust with a medium-rare beef. But you can bake the beef wellington longer if you wish to have it medium well or well done.

Dip it with your preferred sauce.

Serve beef wellington with mashed or new potatoes, asparagus, mushrooms or mixed veggies.

Beef And Cheese Enchiladas Recipe

Enjoy your week with a Mexican dish you will surely love! Beef and cheese enchiladas is a very tasty and cheesy meal you will get to enjoy with your family over weekday dinner. You can pair it up with guacamole or a healthy vegetable salad to complete the night. This recipe takes about 40-50 minutes. Serves 6.

Ingredients:

For the Ground Beef:
• 1 lb ground beef
• 2 garlic cloves (minced)
• 14 corn tortillas
• 1/4 cup onions (diced)
• 1/3 cup oil (for softening tortillas)
• Oil (for onion saute)
• 1/2 tsp salt
• 1/2 tsp ground cumin
• 12 oz cheddar cheese (Colby jack cheese as an alternative)
• Pepper to taste

For Enchilada Red Sauce:
• 4 tbsp all-purpose flour
• 2 tbsp chili powder
• 2 cups water (or 2 cups of chicken stock as an alternative)
• 1/4 cup oil
• 1/4 tsp ground cumin
• 1/2 tsp garlic powder
• 1/2 tsp onion powder
• 1 Knorr brand chicken bouillon cube

Instructions:

For the Ground Beef:
In a skillet, add a little bit of oil and let it heat.
Saute onion.
Add ground beef and garlic.
Season with salt, ground cumin, and black pepper.
Mix well and cook until ground beef is cooked through.
Remove from heat and set aside.

For the Corn Tortillas
Set a grilling pan and add a little bit of oil.
Let it heat.
Warm the tortillas on both sides.
Set aside.

*The corn tortillas will not be fried. They will be warmed up, so make sure it will not be overcooked.

For Enchilada Red Sauce:
Set a saucepan and add oil.
Sprinkle the all-purpose flour and whisk for 30 seconds until it dissolves.
Add knorr cube and whisk to combine well.
Add chili powder while continuing to whisk.
Add other seasonings – ground cumin, garlic powder, and onion powder. Continue to whisk.
Gradually add the water while whisking.
Remove from heat and set aside.

Assembly:
Add shredded cheese and 1-2 tbsp of ground beef mixture on the corn tortilla. Roll it and place it on a 9 x 13-inch baking dish.
Repeat this until the baking dish is filled with the rolled tortillas.
Sprinkle the remaining ground beef mixture on top of the tortillas.
Add shredded cheese and enchilada red sauce.
Sprinkle with the remaining shredded cheese.
Cover with foil wrapper.
Bake for 20 minutes in a preheated oven at 375 F.
After 20 minutes, remove the foil wrapper cover and continue to bake for 10-15 minutes.
Remove from the oven.
Slice for serving.
