How To Make Quesadillas

Quesadillas originated in Mexico that consists mainly of cheese, spices, and meats folded in corn or flour tortilla. Over time, there have been variations when it comes to the fillings of quesadillas. You can try these three filling options for your favorite tasty quesadillas.

Ingredients:

Chicken Filling:
• 500 grams skinless, boneless chicken thighs
• 2 1/2 tbsp olive oil
• 2 garlic cloves (minced)
• 1 small red bell pepper (diced)
• 1 small onion (sliced)

Vegetable Filling:
• 2 garlic cloves (minced)
• 1 onion (diced)
• 400 grams (1 can) black beans (drained)
• 1 cup corn (can drained)
• 1 bell pepper (diced, any color)
• 2 tbsp vegetable oil
• 1/4 cup water
• 1/4 cup tomato paste

Beef Filling:
• 500 grams ground beef (minced)
• 2 garlic cloves (minced)
• 1 small red bell pepper (diced)
• 1/2 onion (finely chopped)
• 2 tbsp tomato paste
• 1/4 cup water
• 1/2 tbsp olive oil

Quesadilla Spice Mix:
• 2 tsp cumin powder
• 2 tsp paprika
• 1 tsp onion powder
• 1 tsp dried oregano powder
• 1 tsp salt
• 1/4 tsp black pepper
• 1/4 tsp cayenne pepper (optional)

Quesadilla Assembly:
• 6-8 flour tortillas
• 200 grams shredded Monterey Jack cheese
• 1 cup corn kernels (can drained)
• 3/4 cup coriander or cilantro (roughly chopped)

Instructions:

This recipe takes about 25 minutes. Serves 6-8.

Chicken Filling:
Put the quesadilla spices in a bowl and mix until well combined.

Put chicken thigh in a bowl.
Add 1 tbsp olive oil.
Add quesadilla spice mix.
Coat the chicken well.

Set a non-stick skillet over high heat.
Heat 1 tbsp oil.
Saute garlic and onion for 2 minutes.
Add bell pepper.
Cook for another 1 minute.
Transfer to a bowl.
Let it cool and set aside.

Return the skillet over medium heat.
Add 1/2 tbsp oil and let it heat.
Add chicken and cook for 6 minutes on each side or until color turns deep golden.
Switch off heat.
Transfer chicken to a cutting board and let it cool for 1-2 minutes.
Dice the chicken.
Mix with the bell pepper mixture.

Vegetable Filling:
Set a non-stick skillet over high heat.
Add 2 tbsp vegetable oil and let it heat.
Saute onion and garlic for 2 minutes.
Add bell pepper and cook for a minute.
Add beans, corn, tomato paste, water, and quesadilla spice mix.
Mix well and cook for 2 minutes.
Transfer to a bowl and let it cool.

Beef Filling:
Set a non-stick skillet over high heat.
Add 1/2 tbsp olive oil and let it heat.
Saute onion and garlic for 2 minutes.
Add ground beef, breaking it up using a wooden spoon.
Cook it until it turns to brown.
Add bell pepper and cook for another minute.
Add tomato paste, water, and quesadilla spice mix.
Mix well and cook for 2 minutes.
Transfer to a bowl and let it cool.

Quesadilla assembly:
On a flat surface, lay a tortilla.
Sprinkle a little of shredded cheese on half part of the tortilla.
Top with your preferred filling (chicken, vegetable, or beef).
Sprinkle with coriander or cilantro.
For chicken or beef filling, you can add corn.
Top it off with shredded cheese.
Fold in half.

Set a non-stick skillet over medium-low heat.
Put the quesadilla assembly in the skillet.
Press it down lightly and cover with lid.
Let it cook for 3 minutes or until golden brown and crispy.
Flip carefully the other side.
This time do not cover with lid.
Press it down lightly and cook for 3 minutes.
Transfer to a container and cut in half.
Serve and enjoy!

Tips and ideas:

Serve with dips such as sour cream, guacamole, or salsa.

For vegetable filling, you can skip adding corns in the final assembly since it has already corns in the cooked mixture.

Southern Hamburger And Potato Casserole (Easy Recipe)

Try this delicious and easy homemade Southern hamburger and potato casserole for your lunch. This recipe consists of a beef mixture and potatoes topped with shredded cheddar cheese. This will surely make everyone ask for more! This recipe takes about 1 hour and 30 minutes. Serves 6-7.

Ingredients:

• 1 1/2 lbs ground beef
• Salt and black pepper to taste
• 1 large white onion (diced)
• 1 tsp garlic powder
• 2 tsp flour
• 1 cup milk
• 10 1/2 oz (1 can) cream of mushroom
• 15 oz (1 can) pinto beans
• 6 medium potatoes (cut into 1 inch thick slices)
• 1 lb shredded cheddar cheese

Instructions:

Beef mixture:
Heat a large deep pan over medium-high heat.
Add ground beef.
Season with salt and black pepper.
Stir and cook until beef is browning.
Add onions.
Stir well and cook until beef is browned.
Add garlic powder and flour.
Stir for 2-3 minutes.
Reduce to medium-low heat.
Add milk.
Stir for 1 minute or until it thickens.
Add cream of mushroom and stir it.
Add pinto beans.
Mix until well combined.
Let it simmer for 5 minutes.
Set aside.

Potatoes:
Boil sliced potatoes in a pot for 5 minutes.
Drain the water.

Assembly:
Preheat oven to 375 C.

Prepare a bake dish.
Layer with the boiled potatoes.
Sprinkle salt to season.
Layer with the beef mixture and spread evenly.
Add shredded cheese on top.
Layer with the remaining boiled potatoes.
Add the remaining beef mixture on top and spread evenly.
Top it off with shredded cheese.
Bake for 35 minutes.
Slice and serve.

How To Make Greek Moussaka

Greek moussaka is a dish that primarily consists of potato and/or eggplant combined with minced beef. It is served as a main course that originated from Greece. It can be either served hot or cold. You can have fruit or vegetable salad as a side dish.

Ingredients:

Vegetables:
• 3 medium eggplants
• 1 potatoes
• Salt to taste

Meat Mixture:
• 700 grams minced beef
• 1 large onion (finely chopped)
• 2 garlic cloves (crushed)
• 260 grams tomato sauce
• 1 cup (240 ml) beef broth or 1/2 cup (120 ml) red wine
• 2 tbsp tomato paste
• 2-3 tbsp olive oil
• 1 bay leaf
• 1 tsp salt
• 1/2 tsp black pepper
• 1/2 tsp cinnamon powder
• 1 tsp thyme

Bechamel Sauce:
• 1 Liter (4 1/2 cups) milk
• 120 grams butter
• 120 grams flour
• Salt and black pepper to taste
• 1/2 tsp nutmeg
• 85 grams grated parmesan cheese
• 2 egg yolks

Instructions:

Vegetables:
Slice eggplants into 1 cm thick.
Season with salt.
Set aside for 30 minutes.
Wash the eggplants and pat dry using kitchen towel.

Peel the potatoes and slice them.

Fry eggplants and potatoes separately for a few minutes or until golden brown.
Transfer to a plate with a paper towel to drain excess oils.
You can also bake the eggplants and potatoes for a lighter version.

Meat Mixture:
Set a large frying pan over medium heat.
Add 2-3 tbsp olive oil and heat it.
Saute chopped onion for 3-4 minutes or until translucent.
Add crushed garlic cloves.
Saute for 2-3 minutes.
Add minced beef and cook it until the color changes.
Season with salt, black pepper, cinnamon powder, and thyme.
Mix well.
Add tomato paste and mix until well combined.
Put the bay leaf on top.
Add tomato sauce and stir until combined.
Add beef broth or red wine and bring it to a boil.
Reduce to low heat.
Let it simmer for 20 minutes or until the mixture thickens.
Remove the bay leaf.
Set aside.

Bechamel Sauce:
Set a large pot and heat 1 liter of milk.
Once warm, set it aside.

On another pot, melt 120 grams of butter over low heat.
Add flour.
Whisk continuously until it is formed as a smooth paste.
Add the warm milk gradually, while whisking continuously.
Whisk until texture is smooth and soft.
Season with salt, black pepper, and nutmeg.
Add grated parmesan cheese.
Whisk ingredients until it is smooth.
Add 2 egg yolks.
Whisk again until well combined.

Add 4-5 tbsp of bechamel sauce to the meat mixture.
Mix until well combined.

Assembly:
Prepare a baking dish.
Layer the fried potatoes.
Sprinkle with salt to taste.
Layer half of the fried eggplants.
Sprinkle with salt to taste.
Pour the meat mixture on top of the eggplants.
Spread it evenly using a wooden spoon or spatula.
Layer the remaining fried eggplants.
Pour the remaining bechamel sauce.
Spread it evenly.
Sprinkle with grated parmesan cheese.
Bake for 40-50 minutes or until golden brown at an oven temperature of 180 C.
Let it cool for a minimum of 45 minutes.
Slice for serving and enjoy!
