How To Make The Ultimate Crispy Fish And Chips

This ultimate crispy fish and chips is the dish you need to cap off the weekend. Coat the fish pieces with a flavorful batter to make them delicious and crispy. Bake seasoned potato strips to match the crispy fish and serve with the dip of your choice.

Ingredients:

Chips

• 6 large potatoes (unpeeled, cut into thin strips)
• 3 tbsp vegetable oil
• 2 tsp garlic powder
• 1/2 tsp sweet paprika
• 1 tsp sea salt
• pepper to taste

Fish

• 4 x 5 oz white fish pieces (codfish or snapper)
• 1 cup cornflour
• 400 grams all-purpose flour
• 3 tsp baking powder
• 1/2 tsp turmeric powder
• salt to taste
• pepper to taste
• 320 ml cold beer
• 280 ml cold soda water
• vegetable oil (for deep frying)

Instructions:

Chips

Preheat oven to 180ºC.

Soak potato strips in water for 10 minutes.
After 10 minutes, drain the water.
Place potato strips on a dishcloth and pat them dry.
Transfer to a baking tray.
Season with sweet paprika, garlic powder, sea salt and pepper.
Drizzle with some oil.
Mix well to coat.
Place inside the preheated oven.
Let it bake for 30 minutes.
Flip over the potato strips and bake for additional 30 minutes.

Meanwhile, prepare the fish.

Fish

Add all-purpose flour in a bowl and keep it in the fridge for 15 minutes.
After 15 minutes, it’s ready to use.
Add baking powder.
Season with turmeric powder and salt.
Mix well.
Pour cold beer and cold soda water.
Whisk until batter is well combined.
Set aside.

Place the fish pieces on a plate and keep them in the fridge until they are ready to cook.
Once ready to cook, season the fish pieces with salt and pepper.
Coat each fish piece with cornflour.
Dip into the batter.
Deep-fry over high heat in a pan with vegetable oil.
Keep on flipping the fish to have an even texture.
Once golden brown, remove from the pan.
Transfer to a paper towel to drain excess oil.

At this time, the potatoes are done.
Remove from the oven.
Transfer to a serving plate together with the fried fish.
Serve with your favorite dip.

Southern Fried Catfish

This southern fried catfish is a perfect weekend brunch or dinner recipe. You can serve this crisp and golden brown textured fried catfish with steamed mixed vegetables, mashed potato, or fries. It’s even more delicious when dipped in hot sauce, mayonnaise, or sweet chili!

Ingredients:

• 4 catfish fillets
• 1 tbsp garlic powder
• 1 tbsp black pepper
• 1 tbsp onion powder
• 1 tbsp paprika
• 2 tbsp creole seasoning
• 2 tbsp yellow mustard
• 1/2 cup hot sauce
• 1 1/2 cup cornmeal
• 1 1/2 cup flour
• 2 eggs (beaten)
• oil for deep frying

Instructions:

Prepare a stainless steel deep fryer.
Add oil and make sure it does not exceed the minimum fill.
Heat it at 350 F.

Catfish:

Place the catfish fillets in a large mixing bowl.
Set aside.

Seasonings Mix:

Meanwhile, prepare a medium bowl.
Add the seasonings – garlic powder, black pepper, onion powder, paprika and creole seasoning.
Mix to combine.
Set aside.

Flour Mix:

Put the cornmeal, flour and 2 tbsp of the seasonings mix into a ziplock bag.
Mix well to combine.
Set aside.

Marinade:

In another bowl, add beaten eggs, yellow mustard and hot sauce.
Add the remaining seasonings mix.
Mix well to combine.

Pour the marinade over the catfish fillets.
Toss the fillets into the marinade to coat well.
Dip and coat into the flour mixture.
Deep fry into the deep fryer until crisp and golden brown.
Once done, transfer to a plate.
Serve with your favorite dips.

Award Winning Fish Pie Recipe

This easy to make, delicious, award winning fish pie is a perfect dinner dish for the entire family. Prepare this creamy dish as an afternoon comfort food too. This recipe takes about an hour to prepare and cook.

Ingredients:

For the potatoes:

• 1-kilo potatoes (peeled and quartered)
• 1 1/2 tbsp butter
• 3 tbsp double heavy cream
• salt and pepper to taste

For the fish

• 2.5 cups milk
• 2 salmon fillets (boneless)
• 2 cod fillets (boneless)
• 15 prawns (peeled and deveined)

Sauce:

• 1 1/2 tbsp butter
• 2 tbsp plain flour
• 3/4 cup mature cheddar cheese (grated)

Other Ingredients:

• some grated cheddar cheese (for garnishing)

Instructions:

Preheat oven to 400 F.

For the potatoes:

Place peeled and quartered potatoes in a pot.
Add water enough to cover the potatoes.
Let it boil for 15 minutes.
Once done, remove from the heat and drain water.
Use a potato ricer to mash the potatoes.
Season with salt and pepper to taste.
Mix well to combine.
Set aside.

For the fish

Set a large pot over medium-high heat.
Pour milk.
Add salmon and cod fillets.
Bring to a boil.
Once it boils, let it cook for three minutes.
Add prawns into the pot at the last minute of boiling.
Once done, transfer them into a baking dish.
Remove the skin off of the fillets and set aside.
Transfer the milk into a bowl and set aside.

Sauce:

Set a saucepan over medium heat.
Add butter and melt it.
Once it melts, add plain flour.
Whisk until combined.
Gradually add the milk set aside earlier while stirring.
Add grated mature cheddar cheese.
Whisk until cheese melts into the mixture.
Remove from the heat.

Assembly:

Pour the sauce over the fish in the baking dish.
Add mashed potatoes on top.
Spread using a fork to distribute evenly.
Sprinkle some grated cheddar cheese on top.
Place inside the preheated oven.
Let it bake for 15-20 minutes.
Once cheese melts and golden brown, remove it from the oven.
Serve and enjoy.

Tips and ideas:

You can use cooked prawns or shrimps and add them into the baking dish once fish fillets are cooked.
