How To Make Super Soft And Moist Chinese Bakery Buns

Tangzhong, or water-roux, is a method popular in making bread in Asia. A favorite in Chinese bakeries is these soft milk buns. These buns are soft, moist, light, and airy. Although the dough needs to sit for hours to set, these buns are definitely worth every bite. These buns are perfect with tea and coffee.

Ingredients:

Water-roux:

• 5 tbsp of bread flour
• 250 ml of cold water

Bread:

• 112 grams of cold milk
• 6 grams of sweetened condensed milk
• 33 grams of sugar
• 3 grams of dried yeast
• 1 whisked egg
• 120 grams of water-roux
• 300 grams of bread flour
• 48 grams of cake flour
• 6 grams of milk powder
• 25 grams of salted butter

Instructions:

This recipe takes about 45 minutes to cook. The dough needs to sit for 4 hours to rise. Serves 2 to 3.

To make the water-roux, mix bread flour and cold water in a saucepan.
Place the saucepan over low heat.
Whisk until thickened and smooth.
Set aside to cool or place in the fridge overnight until ready to use.
In a large bowl, add cold milk, sweetened condensed milk, sugar, dried yeast, whisked egg, water-roux, bread flour, cake flour, and milk powder. Mix until well incorporated.
Add the softened butter and knead the dough until springy and shiny.
Cover the dough with a lid and allow it to rise for 2 hours or overnight.
Place the dough on a clean flat surface.
Knead the dough and divide into 3 equal parts.
Roll the dough into logs.
Place the logs in a greased loaf pan and let it rise for 1 to 2 hours.
Preheat the oven to 170C.
Bake for 45 minutes.
Let it cool on a wire rack before cutting.

• In this recipe, the dough was placed in an oven with 2 cups of boiling water under it. This allows the dough to rise in 1 to 2 hours.

• The bread stays fresh for 2 days in an airtight container.

Snowflake Cookies

Snowflake cookies are perfect for the holidays! With very few ingredients, your kids can definitely help out making these.

This recipe takes about 25 to 30 minutes to make. Serves 9 to 12 cookies.

Ingredients:

• 2 cups of cornflakes
• Cup of chocolate chips
• Shredded coconut
• 2 egg whites
• Salt
• Powdered sugar, sifted to remove lumps
• One quarter tbsp of almond extract

Instructions:

Preheat the oven to 325C.
Beat the egg whites until they become stiff peaks.
Add a pinch of salt and beat them again.
Pour powdered sugar and almond extract. Mix well.
Once the mixture turns into a glue-like substance, add cornflakes, chocolate chips, and shredded coconut.
Mix together with a spoon.
Place some parchment paper on a baking tray.
Scoop the mixture on the tray.
Bake in the oven for 20 minutes.

• Aside from chocolate chips, you can also add peanut butter chips, raisins, or even oatmeal. Not a fan of shredded coconut? How about using dried fruits, cacao nibs or ground nuts?

• For a more festive look, why not use holiday molds to shape your cookies? Snowflakes are definitely a must try! You can even decorate the cookies with some chocolate syrup or honey.

How To Make Crispy Baked Sweet Potato Chips / Como Hacer Chips De Batata

After a long day of work or a tiring week of exams in school, all you want to do is to relax and catch up on your favorite TV series or movies. But movie night is incomplete without some crunchy snack. Before you grab that store-bought bag of chips, give this recipe a try. There are only a few ingredients, but the results will keep you grabbing more and more sweet potato chips. These are definitely a healthy way to satisfy those crunchie cravings.

This recipe takes about 60 minutes to make. Serves 1 to 2.

Ingredients:

• 2 large sweet potatoes
• Coconut oil
• Salt
• Rosemary
• Garlic

Instructions:

Preheat the oven to 300F.
Cut the sweet potatoes into one-eight inch thick pieces using a sharp knife or a mandolin.
Place the potato slices on a parchment paper on top of a baking sheet.
Spray the slices with coconut oil and sprinkle some salt.
Bake for 20 minutes.
Remove from the oven and flip the potato slices.
Bake for another 20 minutes.
Remove from the oven. Check for soft or flimsy chips. Put them back in the oven for another 10 minutes.
Place the firm chips on a cooling rack.
Repeat this process in increments of 8 to 10 minutes until all the chips are firm.
Pour the chips in a bowl and spray with coconut oil.
Garnish with minced fresh rosemary and garlic.

Ideas And Tips:

• Make sure to slice the sweet potato slices in the correct size. Making the slices too thick may not make them crunchy.

• Aside from rosemary and garlic, you can add any garnish to these chips. For something sweet, drizzle with some honey and nuts. For an added kick, sprinkle some red pepper flakes.
