Triple Layer Pomegranate Mousse Dessert

Some of the further claimed health benefits of pomegranates include clearing up the skin, reducing inflammation and treating of sore throats, stomach disorders, dental problems, osteoarthritis, anemia, and diabetes.

In this recipe, pomegranate juice and seeds are used to make a vibrant triple-layer pomegranate mousse dessert. It is an elegant-looking dessert but very easy to make. This dessert is perfect for parties or as a gift to your family and friends. Everyone will enjoy the sweet-tart flavor in every layer, including the fresh pomegranate seeds in the mouse and on top.

Ingredients:

• 2 cups of heavy cream
• 2 cups of confectioner’s sugar
• 1 tsp vanilla extract
• 340 grams of whipped cream cheese
• 113 grams of strawberry Jell-O powder
• 3/4 cup of boiling water
• 3/4 cup of cold pomegranate juice
• 1 cup of pomegranate seeds
• 170 grams of strawberry Jell-O powder
• 1 cup of boiling water
• 1 cup of cold pomegranate juice
• 2 cups of pomegranate seeds

Instructions:

This recipe takes about 3 hours to make. Serves 8 to 10.

To prepare the gelatin for the middle layer, mix strawberry Jell-O powder with boiling water in a bowl.
Stir until the gelatin is dissolved.
Stir in pomegranate juice.
Keep it in the fridge just until the gelatin is starting to set.

To make the mousse, put heavy cream, vanilla extract, and confectioner’s sugar in the bowl of a stand mixer.
Whisk until soft peaks are formed.
Gradually add whipped cream cheese while whisking.
Continue whisking until stiff peaks are formed.
Put half of the whipped cream cheese mixture in a piping bag.
Pipe the whipped cream cheese mixture into serving glasses.
Using a spoon, gently spread the top to even out the mixture.
Keep in the fridge to set until you’re ready to add the next layer.
Add strawberry Jell-O mixture to the remaining whipped cream mixture and whisk until well combined.
Fold pomegranate seeds into the mixture.
Put the pomegranate mousse in a piping bag.
Pipe on top of the cream cheese layer.
Keep in the fridge for at least 1 hour to set.

To prepare the final layer, dissolve the strawberry Jell-O powder in boiling water.
Stir in cold pomegranate juice.
Using a ladle, gently pour the Jell-O mixture right on top of the pomegranate mousse.
Keep in the fridge for at least an hour to set.
Sprinkle pomegranate seeds on top and serve.

• You may substitute whipped cream cheese with 6 ounces of regular cream cheese. Whip it until airy before adding to the whipped heavy cream.

• This is also a perfect make-ahead dessert. Cover the serving glasses with plastic wrap and keep them in the fridge until you’re ready to serve.
