Boil Yukon gold potatoes in a pot of boiling water.

Line a round casserole dish with 6-7 potato slices.
Add 8-10 potato slices around the edges.
Set aside.

Preheat oven to 200 C.

In a mixing bowl, add 1 lb of ground beef.

Ingredients:

• 6 medium Yukon gold potatoes (unpeeled)
• 1 cup olive oil
• salt and pepper to taste
• 1 cup sour cream
• 1 cup ham strips
• 2-3 tbsp chopped green onions
• 1 cup bechamel sauce
• handful of grated mozzarella cheese

Instructions:

Preheat oven to 170 C.

Prepare a baking dish.
Add 6 washed and unpeeled medium Yukon gold potatoes.
Drizzle each with olive oil.
Season with salt.
Place inside the preheated oven.
Bake for 45 minutes.
Once done, remove from the oven and cool for a few minutes.
Transfer to a work surface.
Slice about 1/3 of each potato to make a potato “cup”, then set aside the sliced pieces.
Carefully scoop out the flesh from each potato, but not scooping out all through.
Set them aside.
Place the potato flesh in a mixing bowl.
Add sour cream, ham strips, and chopped green onions.
Season with salt and pepper to taste.
Mix until well combined.
Fill each potato cup with the mixture.
Set aside.

Peel off the skin from the sliced pieces from earlier.
Add them to a baking dish.
Mash and spread evenly on the bottom of the dish.
Place the potato cups on top of the mashed potato layer in an inverted position.

• chopped spring onion
• 1 tbsp vegan cream cheese
• 1/2 tsp chili paste
• a splash of water

Instructions:

Wash sushi rice.
Add the sushi rice into a pot.
Add two cups of water.
Sprinkle a little salt.
Cook it according to package instructions.
Once done, remove from the heat and let it cool.
