Garlic Parmesan Carrot Fries

We all love some good crispy fries. A simple way to make fries healthy is by oven-frying them instead of deep-frying. However, if your kids only want eating fries for sides or snacks, then why not use other vegetables instead of the usual potatoes? Naturally sweet and crunchy carrots are great for fries, too. They are also rich in anti-oxidants, vitamins, and dietary fiber. In the recipe, the carrot sticks are coated with parmesan cheese, seasonings, and parsley to make the fries tastier and more appealing to kids. Sometimes getting them to eat their veggies requires a little cunning…

This recipe also uses just a little amount of oil. Enjoy these carrot fries with the tangy yogurt-based dipping sauce.

Ingredients:

Carrot Fries:

• 2 carrots
• 1 tbsp oil
• ¼ cup of parmesan cheese
• 1 tbsp garlic powder
• 1 tsp pepper
• ¼ cup of chopped fresh parsley
• ½ tsp salt

Dipping Sauce:

• 2 tbsp Greek yogurt
• 1 tbsp lemon juice
• ½ tsp garlic salt
• 1 tsp pepper

Instructions:

This recipe takes about 35 to 40 minutes to make. Serves 2.

Preheat the oven to 400°F.
Cut the carrots into sticks and place them in a large mixing bowl.
Add oil, parmesan cheese, garlic powder, pepper, parsley, and salt.
Using a spatula, mix well to make sure that each carrot stick is well-coated with the seasonings.
Spread carrot sticks on a baking sheet.
Bake in the oven at 400°F for 15 to 20 minutes.
Take the baking sheet out from the oven.
Let the carrot fries to cool for 5 minutes.
In a small bowl, mix all the ingredients for the dipping sauce.
Transfer the carrot fries to a serving plate.
Sprinkle more parmesan cheese and chopped parsley on top.
Serve with the dipping sauce on the side.

Ideas And Tips:

• You can also use this same recipe to make zucchini, asparagus, parsnip, taro, jicama, butternut squash, eggplant, cassava, sweet potato or potato fries.

• You can also add panko breadcrumbs to make the fries crunchier.
