Honey Curry Chicken Thighs Recipe – Easy Weekday Dinner Idea

Chicken thighs are probably the easiest to cook. It is affordable and super accessible. Here is another favorite dish you can easily prepare for a weekday dinner – honey curry chicken thighs. A few ingredients to make it flavorful and your dinner is solved!


• 5 boneless chicken thighs
• 2 tbsp soy sauce
• 1 tbsp curry powder
• 1 garlic clove (minced)
• 1/4 cup raw honey
• 1/4 cup butter (melted)
• 1/4 cup dijon mustard
• 2/3 cup onions (diced)
• Black pepper to taste (optional)
• Parsley (chopped for garnishing)


In a large bowl, mix all ingredients except chicken thighs and parsley.
Mix well.
Coat the chicken thighs with the mixture.
Place on a dish and marinate for 4-8 hours.
Cover and put inside the fridge.

Set buttered grill pan over medium-high heat.
Place the chicken thighs on the pan.
Let it grill for 6-8 minutes on each side or until the chicken is cooked thoroughly.
Transfer to a plate.
Garnish with chopped parsley.
Serve and enjoy!

Strawberry Milkshake

Milkshake is a sweet, cold beverage that is made from milk or ice cream sweetened with butterscotch, caramel sauce, chocolate syrup or fruit syrup. The classic milkshake has evolved into a more sophisticated drink with a variety of flavors and toppings served in fast food chains, restaurants, diners and shake shops. This strawberry milkshake can be easily created and enjoyed at home with the help of your trusty blender. This recipe uses frozen strawberries to achieve that cold, slushy beverage.


This recipe takes about 3 minutes to make. However, the strawberries need to pre-freeze for about 2 to 4 hours or until they are hard as ice cubes. Serves 3 to 4.

• 1 lb of strawberries, washed and stems removed
• 2 tbsp of brown sugar
• 4 tbsp of honey
• 3 cups of cold milk


Cut the strawberries into quarters and place them in a bowl.
Add 2 tablespoons sugar and mix well.
Divide the strawberries into two portions and put each portion in a plastic bag.
Place the bags in the freezer and let the strawberries freeze until they are as hard as ice.
Take out a bag of frozen strawberries from the freezer and let it sit on your kitchen counter for about a minute or two.
Separate the strawberry pieces by hand while inside the plastic bags.
Put the strawberry pieces in the blender.
Add a cup and a half of cold milk and 2 tablespoons of honey.
Blend for about 30 seconds or until you get that smooth consistency.
Pour into chilled glasses and serve immediately.

Ideas And Tips:

• You may use simple syrup instead of honey. Slowly boil an equal amount of sugar and water in a pot until the sugar is dissolved. Let it cool before using.

• You may also use vanilla ice cream instead of milk, but you may have to lessen the amount of sweetener or completely omit it so your milkshake does not end up too sweet.

• Love milkshake but hate the extra calories? You may use non-fat milk, soy milk, cashew milk or almond milk.

This gluten-free apple and rhubarb crumble recipe is also dairy-free. This healthy and delicious dish is perfect for breakfast, snack or dessert and will surely satisfy your sweet cravings.

Rhubarb grows from the ground, like a vegetable – but is generally consumed as a fruit. The edible part is the thick pinkish to bright red stalk while the leaf, containing high amounts of oxalic acid, is poisonous and should never be eaten. The stalk is extremely sour so it is typically prepared by boiling or baking with 20% sugar. Rhubarb is used in pies, tarts, crumbles and other desserts. It is high in fiber, thus it is used to aid digestion and promote weight loss. It is also high in calcium and vitamins A, C, and K. • 2 Fuji apples, diced
• ½ cup of rhubarb, diced
• 2 tsp lemon juice
• 3 tbsp raw honey
• 1 tsp vanilla
• ½ tsp cinnamon
• 2 tsp coconut flour
• 2 cups of almond flour
• ¼ cup of chopped walnuts
• ¼ tsp salt
• ½ tsp cinnamon
• 2 tbsp honey
• 2 ½ tbsp coconut oil


This recipe takes about 45 or 50 minutes to make. Serves 4 to 6.

Preheat the oven to 350°F.
Put apple, rhubarb, lemon juice, honey, vanilla, and cinnamon in a glass baking dish.
Mix well to combine all the ingredients.
Add coconut flour and mix well.
Spread the mixture evenly in the baking dish.
Set the apple-rhubarb mixture aside while you prepare the topping.
Put almond flour, walnuts, salt, cinnamon, honey, and coconut oil in a large mixing bowl.
Using your hands, mix all ingredients together until you get a crumbly texture.
Evenly, spread crumble topping on top of the apple-rhubarb mixture.
Bake in the oven for 30 to 35 minutes at 350°F.
Let the bakes crumble cool completely.
To serve, spoon crumble into a bowl and top with ice cream.

• If the topping mixture is too sticky, just add more almond flour until you get a crumbly consistency.
