Healthy Vegan Potato Burgers

A healthy vegan potato burger is a simple and healthy version of the burger patty. You and your friends will enjoy lunchtime this weekend with this recipe! This recipe takes about 50 minutes.

Ingredients:

• 2 medium potatoes (boiled)
• 2 carrots (grated)
• 2 large stems of kale (chopped and massaged with sea salt)
• 1 garlic clove (pressed)
• 1 small onion (diced)
• 1 tsp dried wakame (sea vegetable soaked in water, then chopped)
• 1 tsp sea salt
• Black pepper to taste
• 1 tsp ground coriander
• 1/4 tsp cayenne
• 2 tbsp olive oil

Instructions:

This recipe makes nine burger patties.

Place the boiled potatoes in a bowl and mash them.
Set aside.

Set a frying pan over medium flame.
Saute onion and garlic in olive oil until they are soft.
Remove from the flame and add into the bowl of mashed potatoes.
Add grated carrots and chopped kale.
Mix well.
Season with salt, black pepper, ground coriander, and cayenne.
Add some olive oil.
Mix until well combined.

Scoop from the mixture and form into patties.
Place the patties on a parchment-lined baking tray.
Put inside a preheated oven of 350 degrees F and bake for 25-30 minutes.
Serve right away or serve in a bun.

Tips and ideas:

If you don’t have an oven, you can cook the vegan patties in a frying pan.
Set a frying pan over medium flame and heat some olive oil.
Fry the vegan patties for 4-5 minutes on each side or until golden brown.

You can add tomato slices or any vegetable or fruit as toppings.

How To Make The Ultimate Crispy Fish And Chips

This ultimate crispy fish and chips is the dish you need to cap off the weekend. Coat the fish pieces with a flavorful batter to make them delicious and crispy. Bake seasoned potato strips to match the crispy fish and serve with the dip of your choice.

Ingredients:

Chips

• 6 large potatoes (unpeeled, cut into thin strips)
• 3 tbsp vegetable oil
• 2 tsp garlic powder
• 1/2 tsp sweet paprika
• 1 tsp sea salt
• pepper to taste

Fish

• 4 x 5 oz white fish pieces (codfish or snapper)
• 1 cup cornflour
• 400 grams all-purpose flour
• 3 tsp baking powder
• 1/2 tsp turmeric powder
• salt to taste
• pepper to taste
• 320 ml cold beer
• 280 ml cold soda water
• vegetable oil (for deep frying)

Instructions:

Chips

Preheat oven to 180ºC.

Soak potato strips in water for 10 minutes.
After 10 minutes, drain the water.
Place potato strips on a dishcloth and pat them dry.
Transfer to a baking tray.
Season with sweet paprika, garlic powder, sea salt and pepper.
Drizzle with some oil.
Mix well to coat.
Place inside the preheated oven.
Let it bake for 30 minutes.
Flip over the potato strips and bake for additional 30 minutes.

Meanwhile, prepare the fish.

Fish

Add all-purpose flour in a bowl and keep it in the fridge for 15 minutes.
After 15 minutes, it’s ready to use.
Add baking powder.
Season with turmeric powder and salt.
Mix well.
Pour cold beer and cold soda water.
Whisk until batter is well combined.
Set aside.

Place the fish pieces on a plate and keep them in the fridge until they are ready to cook.
Once ready to cook, season the fish pieces with salt and pepper.
Coat each fish piece with cornflour.
Dip into the batter.
Deep-fry over high heat in a pan with vegetable oil.
Keep on flipping the fish to have an even texture.
Once golden brown, remove from the pan.
Transfer to a paper towel to drain excess oil.

At this time, the potatoes are done.
Remove from the oven.
Transfer to a serving plate together with the fried fish.
Serve with your favorite dip.

Crockpot Cajun Style Smothered Potatoes With Sausage And Shrimp

Enjoy this full-flavored crockpot cajun style smothered potatoes with sausage and shrimp. It is a perfect dish for dinner or to take to a potluck dinner. Add more seasonings and mushrooms into the pot if you like for a tastier dish.

Ingredients:

• 1 lb smoked sausage (sliced)
• non-stick cooking spray
• 2 lbs Russet potatoes (peeled and diced)
• 1 green bell pepper (diced)
• 1 white onion (diced)
• 1 tbsp minced garlic
• 1 tbsp onion powder
• 2 tbsp Cajun seasoning
• 1 tbsp liquid shrimp and crab boil concentrate in garlic and onion flavor
• 1/4 cup chicken broth
• 1 tbsp Italian seasoning
• 1 lb shrimps (peeled, deveined and uncooked)
• some chopped green onions (optional for garnishing)

Instructions:

Spray a crockpot with non-stick cooking spray.
Add sliced smoked sausages and spread at the bottom of the pot.
Add diced Russet potatoes, followed by diced green bell pepper and white onion.
Add minced garlic.
Season with onion powder, Cajun seasoning and Italian seasoning.
Add liquid shrimp and crab boil concentrate.
Pour chicken broth.
Cover the pot.
Cook in high for 3 hours or low for 6 hours.
Once done, remove the cover.
Stir a little.
Add raw shrimps in the pot.
Stir to combine.
Cover the pot and cook for another 10-20 minutes or until shrimps are cooked.
Once done, transfer to a plate.
Serve and enjoy!
