Cozy & Lazy Vegan Meal Ideas!

These four hearty vegan meal ideas are quick and easy to prepare. Your comfort food will be ready in no time! You can choose to prepare avocado and bean pizza quesadilla or vegan mac and cheese for an afternoon snack. You can have lentil dhal or roasted sweet potato and chickpea bowl for a light dinner.

1. Avocado And Bean Pizza Quesadilla

Ingredients:

• 2 flour tortillas
• 1 tbsp hummus
• 1 tbsp nutritional yeast
• 1/2 avocado (sliced)
• some red kidney beans
• 2-3 tbsp marinara sauce
• lemon juice

Instructions:

Good for one serving.

Preheat a skillet over medium-high heat.

Lay one flour tortilla on a work surface.
Spread hummus on the tortilla.
Sprinkle nutritional yeast.
Add avocado slices and mash it using a fork.
Add some red kidney beans.
Transfer into the preheated skillet.
Drizzle some lime juice.
Spread some marinara sauce.
Cover with the other tortilla.
Cook for 2-3 minutes or until browned.
Flip it over and cook for another 2-3 minutes.
Once done, remove the pizza quesadilla from the skillet.
Cut into four slices.
Enjoy!

2. Lazy Lentil Dhal

Ingredients:

• 2 onions (chopped)
• 1 tsp Garam masala
• 1 cup red lentils
• 1 tbsp tomato puree
• 2 cups vegetable broth
• 1 can coconut milk
• some water
• 1/2 cup marinara sauce
• salt to taste
• some parsley or basil
• 200 grams rice noodles
• 2 handfuls of baby spinach (optional for side dish)

Instructions:

Good for two servings.

3. Roasted Sweet Potato And Chickpea Bowl

Ingredients:

• 1 medium sweet potato (unpeeled)
• 1-2 tsp coconut oil
• 1 onion (chopped)
• 1 red bell pepper (chopped)
• 1/2 tsp dried herbs
• salt to taste
• juice of 1/2 lemon
• 1/2 cup chickpeas
• 2 handfuls fresh spinach
• fresh basil
• some hummus (optional for garnishing)

Instructions:

Preheat oven to 200 C.

Place an unpeeled sweet potato on a parchment-lined baking tray.
Place it inside the preheated oven.
Roast for an hour.
Once done, remove from the oven and let it cool.
Peel the and place into a bowl.
Set aside.

Meanwhile, set a frying pan over medium-high heat.
Add coconut oil and heat it.
Add chopped onion and red bell pepper.
Saute for 5 minutes until onions and bell peppers are tender.
Add chickpeas.
Squeeze in juice of half a lemon.
Sprinkle with dried herbs and season with salt to taste.
Stir and cook for 5-8 minutes.
Reduce to medium heat.
Add two handfuls of fresh spinach.
Stir and cook for 3-5 minutes or until spinach has wilted.
Once done, remove from the heat.
Transfer the mixture to the same bowl as the roasted potato.
Garnish with some hummus.
Serve and enjoy.

4. Vegan Mac And Cheese

Ingredients:

• 225 grams whole wheat pasta of your choice
• 1 tbsp vegan butter
• 1.5 tsp flour
• 3/4 cup non-dairy milk
• 2.5 tbsp nutritional yeast
• 1 tbsp fresh lemon juice
• salt and pepper to taste
• 1 tsp miso paste (optional)
• 1-2 handfuls grated vegan cheese

Instructions:

Good for two servings.

Cook whole-wheat pasta according to the package instructions.

Meanwhile, prepare the sauce.
Set a small saucepan over medium heat.
Add vegan butter and let it melt.
Once melted, add flour.
Whisk well to combine.
Add 1/4 cup of non-dairy milk.
Whisk for 3-4 minutes or until sauce is thick.
Add nutritional yeast.
Drizzle lemon juice, then season with miso paste, salt and pepper to taste.
Whisk well to combine.
Add the remaining non-dairy milk.
Whisk to combine.
Let it simmer.
Add grated vegan cheese.
Mix until cheese melts.
Once done, remove the saucepan from the heat.

At this time, whole-wheat pasta is done.
Drain water and transfer the pasta into a bowl.
Pour the sauce over the pasta.
Mix well.

Lazy Vegan Dessert Ideas!

Prepare these three quick and easy vegan dessert ideas for the weekend! Each recipe only takes a few minutes to prepare. Enjoy these yummy vegan desserts with your friends either after dinner or as snacks!

1. Peanut Butter Blueberry Cookie

Ingredients:

Peanut Butter Mix:

• 1 tsp coconut oil
• 1 tsp peanut butter
• 1/4 tsp vanilla
• 1 tbsp agave syrup
• 1 tsp raw sugar

Other Ingredients:

• salt to taste
• baking powder to taste
• 1 tbsp almond milk
• 3 tbsp spelt flour
• 6-7 blueberries (fresh or frozen)

Instructions:

This recipe serves one.

Preheat oven to 180 C.

Prepare an oven-proof bowl.
Add coconut oil, peanut butter, vanilla, agave syrup, and raw sugar.
Place it inside the preheated oven for 2-3 minutes or until melted.
Once done, remove it from the oven.
Stir the mixture.
Add the rest of the ingredients – salt, baking powder, almond milk, and spelt flour.
Stir to combine.
Transfer the mixture into a ramekin dish.
Top it off with blueberries.
Place inside the oven for 12-15 minutes.
Once done, remove it from the oven and let it cool.

2. Grilled Chocolate & Raspberry Toast

Ingredients:

• some coconut oil (for greasing)
• 2 bread slices
• 1 tbsp vegan cream cheese
• 2 tbsp semi-sweet chocolate chips
• 2 tsp raspberry jam

Instructions:

This recipe serves one.

Set a frying pan over medium heat.
Grease with some coconut oil.
Add the bread slices to the pan.
While the slices are toasting, spread with vegan cream cheese on one of the slices.
Add raspberry jam, followed by semi-sweet chocolate chips.
Cover the pan.
Let it cook for 3 minutes or until chocolate melts.
Assemble the sandwich.
Slice in half.
Enjoy!

3. White Bean Chocolate Chip Cookie Dough

Ingredients:

• 1 can white beans (rinsed and drained)
• 1 cup oats
• 1/3 cup raw sugar
• 1/4 non-dairy milk
• 1/4 cup chocolate chips
• 2 1/2 tbsp coconut oil
• 3 tbsp agave syrup
• 1/4 tsp salt
• 1 tsp vanilla

Instructions:

This serves 4-6.

Add oats to a food processor.
Push until floured.
Season with salt, vanilla, and raw sugar.
Add agave syrup and coconut oil.
Pour non-dairy milk.
Add white beans.
Push until well combined.
Transfer to a bowl.
Add chocolate chips.
Mix well.
Enjoy!

You can also put it in the fridge before serving.

Garlic Mashed Potatoes – Dairy-Free + Vegan Recipe

Garlic mashed potatoes is a perfect side dish to fried chicken, grilled pork, or steak. Potatoes are seasoned with salt, black pepper and extra virgin oil. Roasted garlic is added to the mixture and mashed together with the potatoes for an added flavor. This recipe doesn’t have milk or butter and is 100% vegan.

Ingredients:

Garlic:

• 1 garlic bulb
• some olive oil to taste
• salt and pepper to taste

Potatoes:

• 2 lbs Yukon potatoes (washed and quartered)
• some water
• 1/2 cup + 2 tbsp extra virgin olive oil
• 1 tsp Kosher salt
• black pepper to taste

• chopped fresh chives (optional for garnishing)

Instructions:

Garlic:

Remove the outer layer of the garlic skin.
Slice half an inch of the garlic top.
Place the bulb on a foil.
Drizzle with some olive oil.
Season with salt and pepper to taste.
Wrap up the foil and seal.
Place it on a baking tray.
Place inside the oven at a temperature of 400 F.
Let it bake for 30-40 minutes.
Once done, remove from the oven.
Remove the cloves out of the garlic casing.
Set aside.

Potatoes:

Put washed and quartered Yukon potatoes in a pot.
Fill the pot with water.
Set it over high heat.
Let it boil for 5-10 minutes or until potatoes are tender.
Once done, drain the water.
Put the potatoes back in the pot.
Add the roasted garlic cloves.
Pour 1/2 cup + 2 tbsp of extra virgin olive oil.
Season with 1 tsp of Kosher salt and black pepper to taste.
Mash the mixture using a potato masher.
Once mashed, transfer to a serving plate.
You can garnish it with chopped chives, a drizzle of olive oil, and a pinch of sea salt.
Serve and enjoy!

Tips and ideas:

You can prepare roasted garlic ahead of time.

You can roast as many garlic bulbs as you like and use it for other recipes.
