Twice Baked Potato With Egg On Top

Are you bored of your usual hash browns and sunny side up eggs for breakfast or brunch? Then give your meal a make-over with this twice-baked potato with egg on top recipe! In this recipe, whole potatoes are baked then sliced in half. The flesh is scooped out then sautéed with onions, garlic, and cheese. The sautéed mixture is stuffed in the potato bowls, then topped with eggs. The potatoes are baked again until the eggs are set. If you are having friends over for breakfast or brunch, this is a perfect dish to serve. These baked potatoes are not only appealing, but they are also healthy and absolutely delicious.

Ingredients:

• 2 large potatoes
• 1 medium yellow onion, diced
• 4 cloves garlic, minced
• 100 grams of grated cheese
• 2 tbsp olive oil
• 4 eggs
• chopped fresh chives
• ¼ tsp salt
• ⅛ tsp freshly ground black pepper

Instructions:

This recipe takes about 60 to 70 minutes to make. Serves 4.

Preheat oven to 400°F.
Using a fork, poke holes on the surface of the potatoes.
Bake the potatoes in the oven for 30 to 40 minutes.
When the potatoes are cool enough to handle, slice them in half lengthwise.
Using a spoon, carefully scoop out some the flesh.
Place the flesh a small bowl and mash well.
Heat oil in a pan over medium heat.
Sauté onion and garlic for 5 minutes.
Add mashed potatoes, grated cheese, salt, and pepper.
Sauté for 1 more minute, then turn the heat off.
Place the potato bowls on a baking sheet lined with parchment paper.
Fill each potato bowl with the sautéed mixture gently pressing down to give enough space for the eggs.
Sprinkle chives on top, then carefully crack open an egg into each potato bowl.
Bake in the oven for 15 minutes or until your desired doneness.
Sprinkle more chives on top and serve.

Ideas And Tips:

• You may substitute oil with 1 tbsp butter.

• You can also sprinkle crispy bacon bits on top.

• If you want more vegetables, you can add chopped carrots, bell peppers or mushrooms.
