Vegan Recipe: Fajita Quesadillas

Quesadillas come from colonial Mexico. It consists of tortilla that has different kinds of fillings. Traditionally, it is stuffed with cheese and vegetables and served with salsa and guacamole. This recipe has all vegan ingredients. It is easy to make, incredibly delicious. These quesadillas are perfect to serve your guests for that afternoon snack with a refreshing drink.

This recipe takes about 15 to 20 minutes to make. Serves 2 to 3.

Ingredients:

• 1 red bell pepper
• 1 yellow bell pepper
• Half of 1 red onion
• 1 large zucchini
• 1 tbsp of safflower oil
• 1 tsp of lemon pepper
• Half a cup of grated vegan cheddar
• Half a cup of grated vegan mozzarella
• 1 bunch of scallions
• 8 flour tortillas
• Vegan butter
• 2 small avocados
• Coriander
• Chipotle creme

Chipotle Crème:

• 1 (7 oz.) can of Chipotle Chiles in adobo sauce
• 1 cup vegan mayonnaise

Instructions:

First, chop the bell peppers, red onion, zucchini, and scallions into strips.
Place the vegetables in a bowl.
Pour safflower oil, and sprinkle with lemon pepper, salt, and pepper.
Mix together until all the vegetables are well seasoned.
In a pan over medium heat, add your vegetables and cook until tender.
Set aside to cool.
Add a little bit of cheddar and Parmesan.
Add 1/3 cup of vegetables into the tortilla.
Fold into half.
Add vegan butter to a pan over medium heat.
Place two folded tortillas in the hot pan.
Cook for 1 to 2 minutes.
Cut avocado into thin slices.
Season avocado with salt.
Cut tortillas into 3.
Garnish with avocado slices, chopped scallions, and coriander.
Drizzle with chipotle cream.

To make the Chipotle creme, simply mix the ingredients together and season with salt and pepper.

Ideas And Tips:

• Everything in this recipe is vegan, but you can use regular cheddar, Parmesan, and mayonnaise.

• Aside from safflower oil, you can substitute with canola, vegetable, olive or corn oil.
