Vegan Turkey Loaf

The turkey is the centerpiece of any Thanksgiving table but, it doesn’t have to be a holiday to serve your family a delicious turkey dish. With this vegan turkey loaf recipe, you can easily make a turkey loaf that you can serve with your favorite stuffing, side dish, sauce or gravy, and use for vegan turkey sandwiches! Vital wheat gluten flour is used to make this healthy dish. Vital wheat gluten flour is a great low-fat protein source. It is also rich in selenium, iron, phosphorus, calcium, and copper. This recipe also uses a mixture of light-flavored seasonings so one can really say, “It tastes like turkey!”

Ingredients:

This recipe takes about 2 hours and 30 minutes to make. Serves 16.

• 1 gallon of water
• 5 cups vital wheat gluten flour
• 1 cup of nutritional yeast flakes
• 2 tbsp granulated onion
• 2 tsp dried thyme
• 2 tsp salt
• 4 cups of vegetable broth
• ½ cup of light olive oil
• 2 tbsp soy sauce
• vegan puff pastry

Glaze:

• 1 cup of water
• 1 cup of ketchup
• dried thyme

Instructions:

Pour 1 gallon of water into a large pot and bring it to a low boil.
In a large bowl, whisk together the dry ingredients: vital wheat gluten flour, nutritional yeast flakes, thyme, granulated onion, and salt.
In a separate bowl, whisk together wet ingredients: vegetable broth, light olive oil, and soy sauce.
Pour wet ingredient mixture into the bowl of the dry ingredient mix.
Using a wooden spoon, stir well just until combined. Do not over-mix.
Form the dough into a loaf and roll it up in a cheesecloth.
Make sure that the loaf is wrapped tightly.
Tie each end of the cheesecloth with a kitchen string.
Take 2 more stings and tie the middle of the loaf for a nice shape.
Place the wrapped loaf in the pot of simmering water.
Cover the pot with a lid and cook the loaf for 2 hours over medium heat.
Take the loaf out from the pot and place it in a dish or plate.
Carefully cut the strings and remove the cheesecloth as the loaf is still hot.
Preheat oven to 400°F.
Place the vegan puff pastry on a floured board.
Run a rolling pin over the puff pastry a few times to make it thinner.
Cover the turkey loaf with the puff pastry.
Give the puff pastry a press to release the air in between the pastry and the loaf.
Fold the pastry seams under the loaf.
Put the pastry-wrapped loaf in a baking dish.
To make the glaze, mix water and ketchup in a small bowl.
Using a pastry or basting brush, brush the glaze mixture on the puff pastry.
Sprinkle thyme on top.
Bake in the oven at 400°F for 25 minutes.
Take the turkey loaf out from the oven and transfer to a serving dish.

Ideas And Tips:

• You may substitute soy sauce with Bragg liquid aminos or tamari if desired.

• If you are using store-bought vegetable broth, you only need to use 1 tsp of salt.

• Over-mixing or kneading the dough will activate the gluten which makes the dough expand too much while cooking.

• Wrapping and tying the dough loosely will result in a soft and spongy loaf. You want a loaf firm as turkey meat.
