A whoopie pie is a cross between a cake and a cookie. It is also called the black moon, gob or bob. It is the official treat of Maine in the US. Whoopie pie can also be made from Oreo cookies and dubbed as “black and white”. It is commonly filled with cream cheese but other variations include using fruit flavors like blueberry.
This recipe is perfect for Valentine’s Day, or simply as a gift to a loved one. Most pies are vibrant red and filled with delicious cream cheese filling. These pies are ready in 15 minutes.
Ingredients:
Cookies:
• 2 cups of all-purpose flour
• 2 tbsp of cocoa powder
• Half a tsp of baking powder
• 1/4 tsp of salt
• 8 tbsp of unsalted butter
• 1 cup of light brown sugar
• 1 large egg
• 1 tsp of vanilla extract
• 1 cup of buttermilk
• 2 tsp of red gel paste
Cream Cheese Filling:
• Half a cup of butter
• 5 tbsp of cream cheese
• 2 tsp of vanilla extract
• 2.5 cups of icing sugar
Instructions:
This recipe takes about 15 minutes to make. Serves 8 pies.
Preheat the oven to 375F.
In a large bowl, mix flour, baking powder, salt, and cocoa powder together. Set aside.
Cream the butter with the sugar using a mixer.
Mix the butter, egg, and vanilla extract until well incorporated.
Drizzle red gel paste depending on the preferred shade.
Mix for a few seconds until the entire batter turns red.
Gradually add flour mixture and buttermilk into the batter.
Transfer the batter into a piping bag.
Draw heart shapes on parchment paper.
Place parchment paper on a baking tray.
Pipe the batter on the parchment paper following the penciled hearts.
Bake the whoopie pies for 7 to 9 minutes.
Place the pies on a cooling tray and let them cool completely.
To prepare the filling, place butter and cream cheese in a mixer.
Pour vanilla extract and set the mixer to medium speed. Mix for 2 minutes.
Gradually pour the icing sugar until well incorporated.
Transfer the filling into a piping bag.
Pipe the filling on one side of the whoopie pie and then place another pie on top.

• When mixing ingredients in an electric mixer, scrape the sides with a spatula to make sure all of the ingredients are well incorporated.
• Before you start mixing your ingredients, be sure to have room temperature butter and eggs so that they mix easily with other ingredients.
