Make a small rope from the modeling chocolate, about 2-3 inches long.
Place them on a nonstick baking paper.
Place another nonstick baking paper on top.
Use a rolling pin to flatten the small balls to form the petals.
Use a rolling pin to flatten the small rope for the center of the flower.
Set aside.

Dip a cake pop stick into the tempered white chocolate.
Push the hulled strawberry into the pop stick.
Dip the strawberry to the tempered white chocolate until well coated.
Shake off excess chocolate.
Let it set.

Roll up the flattened small rope like a spiral halfway to form the center of the flower.
Cut the half of the spiral, then place it on top of the strawberry.
Continue to wrap the rest of the rope around the spiral to form the center of the flower.
Take the first petal and attach it to the side of the strawberry.
Attach the second petal, overlapping the first.
Continue until it has five petals around.
Slightly Bend the petals at the top so that it looks like the rose is opening.
Do this as many as you like with the rest of the modeling chocolate, strawberries, and cake pop sticks.
Arrange the chocolate strawberry roses.
Enjoy!
