How To Make Crustless Spinach Quiche

Quiche is a savory dish consisting of a pastry crust filled with eggs, milk, cheese, vegetables and potentially also seafood or meat. It is generally regarded as a classic French dish but surprisingly it actually originated in Germany. The word quiche is from the German word ‘kuchen’, meaning cake. Quiche should be baked at a temperature not higher than 375°F as the custard needs time to set during baking. Baking at a higher temperature will give you a dry, tough and rubbery filling.

You can serve this quiche hot or cold for any meal of the day. You can even prepare it ahead of time, then slice just before serving.

Ingredients:

• 1 tbsp vegetable oil
• 1 onion, chopped
• 1 10-oz package of frozen chopped spinach, thawed and drained
• 5 eggs
• 3 cups of shredded Muenster cheese
• ¼ tsp salt
• ⅛ tsp ground black pepper

Instructions:

This recipe takes about 50 minutes to make. Serves 6.

Preheat oven to 350°F.
Lightly grease a 9-inch pie dish with cooking spray.
Heat oil in a large skillet over medium-high heat.
Add onions and stir-fry for 3 minutes.
Stir in spinach and continue cooking for 3 more minutes.
Remove from heat.
Beat eggs in a large mixing bowl.
Add salt, pepper, cheese, and sautéed spinach.
Stir well to blend all the ingredients together.
Pour egg mixture into the greased pie dish.
Bake in the preheated oven for about 30 minutes.
Take the pie dish out from the oven.
Let the quiche cool for 10 minutes before slicing and serving.

Ideas And Tips:

• For a richer quiche, you may add 1/2 cup of milk to the egg mixture.

• You may also add other ingredients such as chopped mushrooms, leeks, asparagus, bell peppers, tomatoes, zucchini, carrots, potatoes or sweet potatoes.
