Ingredients:

• 3 potatoes, peeled and boiled
• ¼ cup of finely chopped onions
• 3 tbsp finely chopped coriander leaves
• ½ cup of breadcrumbs
• ¼ tsp chili powder
• 1 tsp coriander powder
• 1 tbsp ginger-garlic paste
• ½ tsp lime powder
• 1 tsp salt
• 2 tbsp all-purpose flour
• 2 tbsp water
• ¼ cup of breadcrumbs
• 1 tsp crushed red chili flakes
• 1 tsp Italian seasoning
• 4 cups of oil

Dipping Sauce:
• 3 tbsp mayonnaise
• ¼ cup of thick curd
• 2 tbsp finely chopped onions
• 1 tsp finely chopped coriander leaves
• 1 tsp sugar
• ¼ tsp salt
• 1 tsp finely chopped coriander leaves

Instructions:

This recipe takes about 25 to 30 minutes to make. Serves 3 to 4.

Grate the boiled potatoes into a large mixing bowl.
Add onions, coriander leaves, breadcrumbs, chili powder, coriander powder, ginger-garlic paste, lime powder, and salt.
Mix well using clean hands until you get a smooth dough.
Set the potato mixture aside while you prepare your breading station.
In a small bowl, mix all-purpose flour and water until smooth.
In a shallow bowl, mix together breadcrumbs, chili flakes, and Italian seasoning.
To form the potato balls, start by putting some oil on your palms so the potato mixture will not stick.
Take 1 tbsp of the potato mixture and form it into a ball.
Dip the potato ball into the flour mixture, then coat it well with the seasoned breadcrumbs.
Roll the ball again in between your palms so the breading will stick.
Continue with the remaining potato mixture.
Heat oil in a pot over medium heat.
Fry potato balls in batches, turning the balls constantly for even cooking.
Fry for 3 to 5 minutes or until crisp and golden brown.
Place the fried potato balls on a wire rack to drain excess oil and while you prepare the dipping sauce.
In a small bowl, mix together mayonnaise, curd, onions, coriander leaves, sugar, and salt until smooth and creamy.
Top off with finely chopped coriander leaves
Stick a toothpick to each potato ball to resemble a lollipop.
Arrange the potato lollipops on a platter and serve with the dipping sauce.

Ideas And Tips:

It is best to cool the boiled potatoes in the refrigerator before making the potato mixture.

You may substitute thick curd with an equal amount of yogurt.

You can substitute lime powder with 1 tsp lime juice.

Aside from potato, you can use sweet potato, celeriac, daikon, rutabaga, turnip, kohlrabi, cauliflower, beetroot, taro root, yam, squash or parsnip.

You can also bake the breaded potato balls in the oven. Line a baking sheet with parchment paper. Arrange the potato balls on the baking sheet, then coat with some cooking spray. Bake in the oven at 350°F for 15 to 20 minutes or until golden brown.
