Hainanese chicken rice is a dish that originated from Southeast Asia particularly in Singapore, Indonesia, and Malaysia. This dish consists mainly of poached chicken and rice. It can be served with fresh cucumber or potato salad as side dishes. It won’t be complete without dipping sauces such as soy sauce and chili sauce.
Ingredients:
• Chicken meat
• 600 grams rice
• 3 tbsp chicken stock
• 2 garlic cloves
• 1 shallot
• 1 pandan leaf
• 2 scallions
• 7 cm ginger
• 1/2 radish
• 1 tbsp chicken fats
• 1 tbsp Shaoxing wine
• 1 tbsp sugar
• 2 tbsp raw chili sauce
• 1 1/2 tbsp soy sauce
• 3 tbsp light soy sauce
• 1 1/2 tbsp salt
• 3 1/2 sesame oil
• White pepper
• Water
Instructions:
This recipe takes about 1 hour and 20 minutes. Serves 4-5.
Prepare the sauces:
For the soy sauce, mix sesame oil, soy sauce, and Shaoxing wine.
Add sugar and 2 tbsp of chicken broth.
Mix well.
For the chili sauce, mix chili sauce and chicken broth.
Prepare the chicken and broth:
Rub some salt on the outer side of the chicken.
Rinse and dry using a paper towel.
Pour soy sauce inside the chicken and spread evenly.
Stuff scallions and ginger inside.
Close the chicken by tying the drumsticks using a thread.
Set a large pot over medium-high heat.
Put water and let it boil.
Once it boils, add the chicken.
Make sure that the chicken is covered by water.
Add scallions and radish.
Once the water stops boiling, flip on the other side.
Cover the lid and let it simmer for 20 minutes.
Transfer to a bowl with water and let it cool for 10 seconds.
Glaze with salt and sesame oil to add flavor.
Chop the chicken to bite-size portions.
Pour soy sauce mixture.
Set aside the chicken broth.
Prepare the rice:
Set a small pot over medium heat.
Put a little amount of olive oil.
Add the chicken fats.
Let it cook for a few minutes until the oil from the chicken comes out.
Remove the chicken.
Saute ginger, garlic, and shallot.
Put the pandan leaf and stir.
Add soy sauce and sesame oil
Reduce to low heat and add rice.
Mix well.
Add the chicken broth.
Make sure the broth covers the rice.
Cover the lid and let it cook for 20 minutes until rice is cooked.
Transfer to a plate.
Serve with the chicken.
