You can enjoy your lunch or dinner with this vegan fried chicken recipe. In this recipe, tofu is the substitute ingredient for the chicken. Make a crispy texture for this vegan meal by mixing rice crisps with the gluten-free flour. Here are the ingredients and instructions.
Ingredients:
• medium-firm tofu
• 1 cup gluten-free flour
• 1/2 tsp white pepper
• 1 tsp salt
• 1 tsp garlic powder
• 1 tsp onion powder
• 1 tsp nutritional yeast
• 2 tbsp vegan egg powder
• 1/2 cup ice-cold water + 1/4 cup ice-cold water
• 1 cup double-strength vegan “chicken-style” broth
• 1 cup organic sprouted brown rice crisps
• oil for deep frying
Instructions:
Squeeze out the liquid from the medium-firm tofu and drain.
Dry the tofu by using a clean kitchen towel.
Break into large chunks.
Set aside.
In a mixing bowl, add a cup of gluten-free flour.
Season with 1/2 tsp of white pepper, 1 tsp of salt, 1 tsp of garlic powder, and 1 tsp of onion powder.
Add 1 tsp of nutritional yeast.
Mix well to combine.
Set aside.
In a small mixing bowl, add 2 tbsp of vegan egg powder.
Pour 1/2 cup of ice-cold water.
Whisk until smooth and well combined.
Add 1/4 cup of ice-cold water to make the mixture thinner.
Whisk to combine.
Set aside.
In another mixing bowl, pour a cup of double-strength vegan chicken-style broth.
Add the tofu chunks into the bowl.
Press the tofu to absorb the broth.
Once absorbed, drain the excess liquid.
Place the tofu chunks in the bowl of flour mixture.
Carefully coat each tofu chunk.
Transfer the chunks on a parchment-lined baking tray.
Add a cup of organic sprouted brown rice crisps into the flour mixture.
Mix well to combine.
You can break some rice crisps into smaller pieces to form some texture in the coating.
Dip each flour-coated tofu chunk into the vegan egg mixture.
Coat with the flour and rice crisps mixture.
Place them back on the parchment-lined baking tray.
Set a deep frying pan over medium-high heat.
Add some oil for deep frying and warm it up.
Add the tofu chunks and fry them until golden brown.
Once done, remove from the pan and transfer to a paper towel to drain excess oil.
Let them cool for at least 5 minutes.
Serve with your preferred dip.
Enjoy!
