This ultimate crispy fish and chips is the dish you need to cap off the weekend. Coat the fish pieces with a flavorful batter to make them delicious and crispy. Bake seasoned potato strips to match the crispy fish and serve with the dip of your choice.
Ingredients:
Chips
• 6 large potatoes (unpeeled, cut into thin strips)
• 3 tbsp vegetable oil
• 2 tsp garlic powder
• 1/2 tsp sweet paprika
• 1 tsp sea salt
• pepper to taste
Fish
• 4 x 5 oz white fish pieces (codfish or snapper)
• 1 cup cornflour
• 400 grams all-purpose flour
• 3 tsp baking powder
• 1/2 tsp turmeric powder
• salt to taste
• pepper to taste
• 320 ml cold beer
• 280 ml cold soda water
• vegetable oil (for deep frying)
Instructions:
Chips
Preheat oven to 180ºC.
Soak potato strips in water for 10 minutes.
After 10 minutes, drain the water.
Place potato strips on a dishcloth and pat them dry.
Transfer to a baking tray.
Season with sweet paprika, garlic powder, sea salt and pepper.
Drizzle with some oil.
Mix well to coat.
Place inside the preheated oven.
Let it bake for 30 minutes.
Flip over the potato strips and bake for additional 30 minutes.
Meanwhile, prepare the fish.
Fish
Add all-purpose flour in a bowl and keep it in the fridge for 15 minutes.
After 15 minutes, it’s ready to use.
Add baking powder.
Season with turmeric powder and salt.
Mix well.
Pour cold beer and cold soda water.
Whisk until batter is well combined.
Set aside.
Place the fish pieces on a plate and keep them in the fridge until they are ready to cook.
Once ready to cook, season the fish pieces with salt and pepper.
Coat each fish piece with cornflour.
Dip into the batter.
Deep-fry over high heat in a pan with vegetable oil.
Keep on flipping the fish to have an even texture.
Once golden brown, remove from the pan.
Transfer to a paper towel to drain excess oil.
At this time, the potatoes are done.
Remove from the oven.
Transfer to a serving plate together with the fried fish.
Serve with your favorite dip.
