How To Make Custard Pudding (Recipe)

Custard pudding, also referred to as custard caramel, is a milk-based dessert that is popular in the United Kingdom. The preparation of a custard pudding is very delicate. It is best to watch over it while cooking to avoid overcooking. It includes a sauce, typically sugar and vanilla.

Ingredients:

For the Caramel Sauce:

• 1 tbsp water
• 4 tbsp granulated sugar
• 2 tbsp hot water (to even out the caramel)

For the Egg Mixture:

• 2 eggs
• 5 tbsp granulated sugar
• 250 ML milk

• Unsalted butter
• 130 ML pudding mold or custard cups

Instructions:

Cooking time is 40 minutes and serves 4.

For the Caramel Sauce:

Prepare custard cups
Coat the inner surface with unsalted butter, then set aside.

Set a pot on the burner over medium heat.
Add 4 tbsp of granulated sugar and 1 tbsp of water.
Do not stir, instead swirl the pot to dissolve the sugar until the mixture changes color and caramelizes.
Remove pot from the heat.
Quickly add 2 tbsp of hot water into the pot, then swirl it to even out the caramel.
Pour the caramel into each custard cup to coat the bottom evenly.
Set aside for later use.

For the Egg Mixture:

In a mixing bowl, crack open two eggs.
Whisk to make the egg wash, then set aside.

Set a pot on the burner medium heat.
Add 250 ml milk and 5 tbsp of granulated sugar.
Stir the mixture until sugar dissolves.
Remove from the heat.
Gradually add the mixture into the egg wash while whisking to mix well.
Once mixed well, sift the mixture using a fine-mesh strainer to a large measuring cup for easy pouring.
Get the caramel sauce-coated custard cups and fill each cup with the egg mixture.
Once done, cover each cup with foil.

Meanwhile, fill a deep pan with water and place a kitchen towel in it.
Let the water heat.
Once heated, put the custard cups on the towel.
Cover the pan and steam for 18-20 minutes.
Keep the temperature below boiling point to achieve a smooth texture.
After 20 minutes, remove the custard cups from the pan and let them cool.
Place inside the fridge and chill for a few minutes.
Carefully remove the custard pudding from the cups.
Serve and enjoy!
