Enjoy your week with a Mexican dish you will surely love! Beef and cheese enchiladas is a very tasty and cheesy meal you will get to enjoy with your family over weekday dinner. You can pair it up with guacamole or a healthy vegetable salad to complete the night. This recipe takes about 40-50 minutes. Serves 6.
Ingredients:
For the Ground Beef:
• 1 lb ground beef
• 2 garlic cloves (minced)
• 14 corn tortillas
• 1/4 cup onions (diced)
• 1/3 cup oil (for softening tortillas)
• Oil (for onion saute)
• 1/2 tsp salt
• 1/2 tsp ground cumin
• 12 oz cheddar cheese (Colby jack cheese as an alternative)
• Pepper to taste
For Enchilada Red Sauce:
• 4 tbsp all-purpose flour
• 2 tbsp chili powder
• 2 cups water (or 2 cups of chicken stock as an alternative)
• 1/4 cup oil
• 1/4 tsp ground cumin
• 1/2 tsp garlic powder
• 1/2 tsp onion powder
• 1 Knorr brand chicken bouillon cube
Instructions:
For the Ground Beef:
In a skillet, add a little bit of oil and let it heat.
Saute onion.
Add ground beef and garlic.
Season with salt, ground cumin, and black pepper.
Mix well and cook until ground beef is cooked through.
Remove from heat and set aside.
For the Corn Tortillas
Set a grilling pan and add a little bit of oil.
Let it heat.
Warm the tortillas on both sides.
Set aside.
*The corn tortillas will not be fried. They will be warmed up, so make sure it will not be overcooked.
For Enchilada Red Sauce:
Set a saucepan and add oil.
Sprinkle the all-purpose flour and whisk for 30 seconds until it dissolves.
Add knorr cube and whisk to combine well.
Add chili powder while continuing to whisk.
Add other seasonings – ground cumin, garlic powder, and onion powder. Continue to whisk.
Gradually add the water while whisking.
Remove from heat and set aside.
Assembly:
Add shredded cheese and 1-2 tbsp of ground beef mixture on the corn tortilla. Roll it and place it on a 9 x 13-inch baking dish.
Repeat this until the baking dish is filled with the rolled tortillas.
Sprinkle the remaining ground beef mixture on top of the tortillas.
Add shredded cheese and enchilada red sauce.
Sprinkle with the remaining shredded cheese.
Cover with foil wrapper.
Bake for 20 minutes in a preheated oven at 375 F.
After 20 minutes, remove the foil wrapper cover and continue to bake for 10-15 minutes.
Remove from the oven.
Slice for serving.
