This vegan mac and cheese is a homemade recipe using healthy and accessible ingredients. This is full of flavor, creamy, and beneficial for your health that can be prepared in less than 30 minutes. You will surely enjoy this dish with your kids at home!
• 5.5 cups raw vegan elbow pasta (cooked)
• 1 cup sweet potato (cooked)
• 1 cup nutritional yeast
• 16 oz can cannellini beans (rinsed and drained)
• 2-3 tbsp soy sauce
• 3 tbsp tahini
• 2 tbsp agave nectar
• 1 yellow bell pepper
• 1/2 cup almond milk
• 1/2 cup canola oil
• 1/4 teaspoon black pepper
• 1 teaspoon garlic powder
Cook the pasta over medium-high heat and bring it to a boil.
Drain and set aside.
In a blender, put all ingredients – cannellini beans, cooked sweet potato, and yellow bell pepper.
Add all seasonings – soy sauce, garlic powder, black pepper, canola oil, tahini, and agave nectar.
Put nutritional yeast and almond milk.
Blend together for 6-8 minutes or until it becomes a fine puree.
In a bowl, put the cooked pasta.
Pour the mixture.
Mix gently to combine.
