Add this tasty Nigerian meat pie to your list of comfort foods. This meat pie is filled with diced carrots, onions, and potatoes mixed with ground beef. You can add more spices to your mix to achieve a more flavorful meat filling to your pastry. This recipe takes about 2 hours and 10 minutes to prepare and cook and the quantities listed should make 12 servings.
Ingredients:
For the dough:
• 4 cups all-purpose flour
• 1 tbsp sugar
• 1 tsp salt
• 1 tsp baking powder
• 200 grams cold butter
• 2 eggs
• 1/4 cup cold water
For the filling:
• 2 tbsp oil
• 1 chopped white onion
• 1 diced carrot
• 3/4 lb ground beef
• 1 tsp salt
• 1/2 tsp black pepper
• 1 tsp thyme
• 1 peeled and diced potato
• 1 cup beef broth or water
• 2 tbsp flour
• beaten egg
Instructions:
For the dough:
In a mixing bowl, add 4 cups of all-purpose flour, 1 tbsp sugar, 1 tsp salt, and 1 tsp baking powder.
Mix until well combined.
Add 200 grams cold butter.
Mix using your clean hands until crumbly.
Set aside.
In another bowl, crack open two eggs.
Pour 1/4 cup cold water.
Whisk until well combined.
Gradually add the egg mixture into the flour mixture until dough forms.
Form the dough into a round-shape.
Wrap it with a cling film.
Place inside the fridge for 30 minutes.
For the filling:
Set a pan over medium heat.
Add 2 tbsp oil and warm it up.
Saute chopped white onion for 5-6 minutes until golden.
Add diced carrot and cook for 3-4 minutes until tender.
Add 3/4 lb ground beef and cook for 4-5 minutes until color changes.
Season with 1 tsp salt, 1/2 tsp black pepper, and 1 tsp thyme.
Stir to combine.
Add diced potato and stir until potatoes are tender.
Pour 1 cup water or beef broth.
Bring to a boil and reduce to low heat.
Let it simmer for 10-15 minutes.
Add 2 tbsp flour and stir until thick.
Remove from the heat and let it cool.
Set aside.
Assembly:
Preheat oven to 350 F.
After 30 minutes, remove the dough from the fridge.
Divide the dough into 2-4 parts.
Roll out the dough into 1/8-inch thickness.
Make a round cut-out shape.
Get a spoonful of the filling and place it in the center of each dough.
Brush the edges of the dough.
Seal and secure by pressing the edges or pressing a fork to make patterns.
Place the pastries on a parchment-lined baking tray.
Pinch each pastry with a fork to let the steam out when baking.
Brush each pastry with beaten egg.
Place inside the preheated oven for 25-30 minutes or until golden.
Remove from the oven and let it cool.
Serve and enjoy!
