Vegan Seitan Corned Beef

Canned foods are typically chosen because they are convenient and affordable, however canned foods may contain significant amounts of preservatives and even BPA (a substance that comes from plastic coating on the inside of the can) which can be harmful to one’s health down the line. When given the choice, it is always better to choose fresh foods. This vegan alternative to corned beef uses seitan, together with a delicious mixture of herbs, seasonings, and spices. You will be able to make a healthy and tasty Reuben sandwich without opening a can of corned beef.


Dry Ingredients:

• 2 cups of vital wheat gluten flour
• 2 tbsp ground fennel seed
• 2 tbsp ground caraway seed
• 2 tbsp Hungarian paprika
• 2 tbsp granulated onion
• 1 tsp ground cloves
• 1 tbsp salt
• 1 tsp ground black pepper

Wet Ingredients:

• 1 cup of vegetable broth
• ½ cup of olive oil
• 2 tbsp molasses
• 1 tbsp vinegar

Reuben Sandwich:

• rye bread
• seitan “vegan corned beef” slices
• thousand island
• vegan cheese
• sauerkraut
• vegan butter


This recipe takes about. 95 minutes to make. Serves 8 to 10.

Put 1 gallon of water in a pot and bring to a boil.
Start by preparing the dry ingredients.
in a large mixing bowl, whisk together wheat gluten flour, ground fennel seeds, ground caraway seeds, Hungarian paprika, granulated onion, ground cloves, salt, and pepper.
In a separate bowl, whisk together vegetable broth, olive oil, molasses, and vinegar.
Pour wet ingredients mixture into the bowl with the dry ingredients.
Using a wooden spoon, mix all the ingredients well.
Using clean hands, press the dough and 5″x8″ loaf with a thickness of about 1″.
Wrap the loaf in a cheesecloth, then tie each end with a string.
Put the loaf in the pot with the boiling water.
Cover the pot with a lid and simmer over medium heat for 1 hour and 15 minutes.
Turn off heat and remove the loaf from the water.
Let the seitan cool before slicing.
To build the Reuben sandwich, put some seitan slices on the rye bread.
Put cheese, thousand island, and sauerkraut, then cover with the top half of the bread.
Spread vegan butter on top of the sandwich and grill, butter side down until golden brown.
Spread vegan butter on top and flip.
Grill until golden brown.
Slice and serve.
