5 Simple Vegan Recipes For Under $4

Vegan food has often been perceived as being expensive. Cooking vegan food at home does not need to be expensive.

These 4 simple recipes are very easy to make and cost under $4. These dishes are healthy and filling as well. These recipes are perfect if you are only cooking for yourself.


Potato Fries With Marinara Dipping Sauce:

• 2.5 lb. of potatoes
• 3/4 cup of tomato basil pasta sauce
• Sriracha hot sauce

Steamed Rice And Veggies:

• 1 cup of brown rice
• 2 cups of frozen mixed veggies
• 3 tbsp of teriyaki sauce

Pasta With Veggies And Marinara Sauce:

• 7 oz of whole wheat pasta
• 2 cups of frozen mixed vegetables
• 3/4 cup of tomato basil pasta sauce

Potato Stew:

• 1 lb. of potatoes
• 1 cup of red lentils
• 14.5 oz can of diced tomatoes
• 1 vegetable bouillon cube
• 3 cups of water

Simple Burrito Bowl:

• 1 cup of brown rice
• 18 0z of pinto beans, rinsed and drained
• 1 clove of garlic
• 6 oz of whole kernel corn
• 3/4 cup of salsa
• 1/3 cup of water


Potato Fries With Marinara Sauce:

Total cooking time is 37 to 40 minutes. Serves 1.

Preheat the oven to 425F.
Scrub and wash the potatoes.
Chop the potatoes into wedges.
Place the wedges on the oven rack and cook for 30 minutes.
Serve with marinara sauce.

Steamed Rice And Veggies:

Total cooking time depends on how long your rice cooks, around 15 to 20 minutes. Serves 1 to 2.

Follow the rice package instructions. You can use a rice cooker as well.
Steam your vegetables until tender.
In a bowl, add rice and mixed vegetables. Drizzle teriyaki sauce on top.

Pasta With Veggies And Marinara Sauce:

Total cooking time is 8 to 10 minutes. Serves 1 to 2.

Follow package instructions to cook the pasta.
Steam your vegetables.
Place the pasta and vegetables together in a bowl.
Pour marinara sauce. Season with salt and pepper depending on your preference.

Potato Stew:

Total cooking time is 3 to 4 hours in the crockpot or 6 to 8 hours over low heat. Serves 2 to 3.

Chop the potatoes into small chunks.
In a non-stick pan, add potatoes, diced tomatoes, lentils, and water.
Bring it to a boil on high heat, and then reduce it to low.
Add the vegetable bouillon cube and stir.
Simmer for 45 to 60 minutes and garnish with black pepper.

Simple Burrito Bowl:

Total cooking time depends on how long your rice cooks, around 15 to 20 minutes. Serves 2.

Follow package instructions on how to cook the rice.
Add beans, water, and garlic clove in a bowl.
Season with salt or chili.
Add bowl of rice with vegetables and serve.

Ideas And Tips:

• For the steamed rice and veggies recipe, you can cook the rice and steam your vegetables at the same time. Most rice cookers have a steamer tray. This makes cooking so much easier and faster.

• If the tomato basil pasta sauce is not available in your local stores, you can whip up your own marinara sauce, or you can use any other tomato-based flavored pasta sauce.
