17 Microwaveable Late-Night Snacks

Satisfy your late-night cravings with these quick and easy 17 microwaveable snacks. You only need a microwave and a few ingredients to prepare these delicious snacks! Each recipe serves one and takes less than 10 minutes to prepare.




1. 4-Minute Barbecue Chicken Nachos

Ingredients:

• 1 cup rotisserie chicken (shredded)
• 3 tbsp barbecue sauce
• handful of tortilla chips
• 1/2 cup pico de gallo
• 1 cup mixed cheese (shredded)
• 1/4 cup green onions (chopped)
• some mashed avocado (optional for garnishing)
• some Greek yogurt or mayonnaise (optional for garnishing)

Instructions:

In a bowl, add shredded rotisserie chicken.
Drizzle with barbecue sauce.
Mix well.

On a microwavable plate, add a handful of tortilla chips.
Add the rotisserie chicken mixture on top.
Add pico de gallo and shredded mixed cheese.
Sprinkle chopped green onions.
Microwave for 2-3 minutes.
Once done, remove it from the microwave.
Top it off with some mashed avocado and Greek yogurt or mayonnaise.

2. Cookies & Cream Mug Cake




Ingredients:

• 4 tbsp flour
• 3 tbsp sugar
• 2 sandwich cookies (crushed)
• 1/2 tsp baking powder
• 3 tbsp milk
• 1 tbsp oil
• 1 tsp vanilla extract

Instructions:

Prepare a microwavable mug.
Add flour, sugar, crushed sandwich cookies, baking powder, milk, oil, and vanilla extract.
Mix well to combine.
Microwave for 1 minute and 30 seconds.
Once done, remove it from the microwave.
Enjoy!

3. 5-Minute Mac & Cheese

Ingredients:

• 1/2 cup macaroni (uncooked)
• 1/2 cup water
• pinch of salt
• splash of milk
• 1/4 cup mixed cheese (shredded)
• pepper to taste
• some chopped chives or green onions (optional for garnishing)

Instructions:

Prepare a microwavable mug.
Add uncooked macaroni.
Pour water.
Season with a pinch of salt.
Mix well.
Microwave for 2-3 minutes.
Once done, remove it from the microwave.
Stir it.
Add a splash of milk and shredded mixed cheese.
Season with pepper to taste.
Mix well.
Microwave for 30 seconds.
Once done, remove from the microwave and mix.
Garnish with chopped chives or green onions.
Enjoy!

4. 5-Minute Microwave Cheesecake

Ingredients:

• 1 tbsp melted butter
• 2 Graham crackers (finely crushed)
• 4 oz cream cheese
• 2 spoons of sugar
• some vanilla extract drops
• 3 raspberries

Instructions:

Prepare a microwavable mug.
Add melted butter and spread it inside the mug.
Add finely crushed Graham crackers.
Mix well.
Press it down the bottom of the mug.
Set aside.

In a bowl, add cream cheese, sugar, and some vanilla extract drops.
Mix well.
Add the mixture on top of the crushed Grahams mixture.
Microwave for 4 minutes, 45 seconds at a time.
Remove from the microwave.
Top it off with three raspberries.
Enjoy!

5. 4-Minute Chicken Quesadilla

Ingredients:

• 2 tortillas
• some chicken strips (cooked)
• 1/2 mixed bell peppers (diced)
• 1 tbsp taco seasoning
• some mixed cheese (shredded)

Instructions:

Place two tortillas on a microwavable plate.
Microwave for a minute.
Set it aside once done.

On another microwavable plate, add some cooked chicken strips and diced mixed bell peppers.
Season with taco seasoning.
Mix well.
Microwave for a minute.
Remove from the microwave once done.
Place the mixture on one tortilla.
Sprinkle some shredded mixed cheese.
Cover with another tortilla.
Microwave for a minute.
Once done, remove it from the microwave.
Slice into four portions.
Enjoy!

6. Chocolate Chip Cookie

Ingredients:

• 2 tbsp butter (melted)
• 1 tbsp brown sugar
• 1 tbsp white sugar
• 1/4 tsp baking powder
• 1/8 tsp salt
• 1/4 tsp vanilla
• 3 tbsp flour
• 2 tbsp chocolate chips
• a scoop of vanilla ice cream (optional for garnishing)

Instructions:

In a bowl, add melted butter.
Add brown sugar, white sugar, baking powder, salt, and vanilla.
Mix well to combine.
Add flour, then mix well.
Add chocolate chips, then mix well to combine.
Transfer to a microwavable mug.
Press to the bottom of the mug.
Microwave for a minute.
Remove from the microwave once done.
Place a scoop of vanilla ice cream on top if you prefer.
Enjoy!

7. Microwave Potato Chips

Ingredients:

• 1 Russet potato (unpeeled and sliced thinly)
• 2 tbsp olive oil
• salt to taste

Instructions:

Pat dry thin slices of Russet potato.
Put them in a mixing bowl.
Drizzle 2 tbsp olive oil.
Coat well.

Prepare a microwavable plate and drizzle some olive oil.
Place the potato slices on the plate.
Sprinkle some salt to taste.
Microwave for 6-7 minutes.
Remove from the microwave once done.
Serve with your favorite dip.
Enjoy!

8. Chocolate Lava Cake

Ingredients:

• 1/4 cup flour
• 1 tsp baking powder
• 2 tbsp sugar
• 2 tbsp cocoa powder
• 1/8 tsp salt
• 2 tbsp oil
• 2 tbsp milk
• a chocolate truffle

Instructions:

In a mixing bowl, add flour, baking powder, sugar, and cocoa powder.
Season with salt.
Mix well.
Add oil and milk.
Mix until well incorporated.
Leave a little amount of the batter in the bowl.
Transfer the rest of the batter into a microwavable mug.
Add a chocolate truffle on top of the batter.
Cover it with the rest of the batter.
Microwave for 70 seconds.
Remove from the microwave once done.
Top it off with a scoop of ice cream if you prefer.
Enjoy!

9. Mug-Baked Rigatoni

Ingredients:

• 6 tbsp marinara sauce (divided into three portions)
• some shredded mozzarella cheeses
• 2 tsp fresh basil (chopped)
• rigatoni pasta (pre-cooked)
• parmesan cheese

Instructions:

Prepare a microwavable mug.
Add 2 tbsp marinara sauce.
Sprinkle with some shredded mozzarella cheese, followed by chopped fresh basil.
Add another 2 tbsp marinara sauce.
Add pre-cooked rigatoni pasta.
Add 2 tbsp marinara sauce, followed by shredded mozzarella cheese.
Top it off with parmesan cheese.
Bake it for 20 minutes at 400 F temperature.
Enjoy!

10. Marshmallow Treat

Ingredients:

• 1 tsp butter
• 8 large marshmallows
• 1 cup rice cereals

Instructions:

Prepare a microwavable mug.
Add butter and marshmallows.
Microwave for 30 seconds.
Remove from the microwave once done.
Mix the melted marshmallows and butter.
Add rice cereals.
Mix until well incorporated.
Transfer to a small baking dish.
Even out and let it rest.
Serve in equal portions.

11. Caprese Pita Pizza

Ingredients:

• 1 pita bread
• 1/4 cup pizza sauce
• 4 mozzarella cheese slices
• 3 tomato slices
• salt and pepper to taste
• some chopped basil (optional for garnishing)

Instructions:

Place pita bread on a microwavable plate.
Spread the pizza sauce on top of the pita bread.
Add mozzarella slices and tomato slices.
Season with salt and pepper to taste.
Microwave for a minute.
Remove from the microwave once done.
Garnish with some chopped basil.
Enjoy!

12. Bacon & Cheese In A Mug

Ingredients:

• 2 tbsp milk
• 1 egg
• a pinch of shredded cheddar cheese
• salt and pepper to taste
• some cooked bacon bits
• some diced tomatoes
• a slice of bread (cubed)
• some minced green onion (optional for garnishing)

Instructions:

In a bowl, add an egg and 2 tbsp milk.
Add a pinch of shredded cheddar cheese.
Season with salt and pepper to taste.
Mix well.

Prepare a microwavable mug.
Add half of the cubed bread, followed by half of the bacon bits and diced tomatoes.
Add the remaining half of the ingredients.
Pour the egg mixture.
Microwave for 70 seconds.
Remove from the microwave once done.
Garnish with some minced green onion.
Enjoy!

13. Banana Bread In A Mug

Ingredients:

• 3 tbsp flour
• 3 tbsp brown sugar
• 1/2 tsp baking powder
• 1/8 tsp salt
• 1 egg
• 1 tbsp milk
• 1 tbsp oil
• 1/4 vanilla extract
• 1 ripe banana

Instructions:

Prepare a mixing bowl.
Add flour, brown sugar, baking powder, and salt.
Mix well.
Add egg, milk, oil, and vanilla extract.
Mix until well incorporated.
Add ripe banana.
Mash into the mixture.
Transfer to a microwavable mug.
Microwave for 90 seconds.
Remove from the microwave once done.
Drizzle with some peanut butter.
Enjoy!

14. Chicken Mug Pie

Ingredients:

• 3-4 tbsp cooked chicken (shredded)
• 2 tbsp frozen mixed vegetables
• 1 1/2 tsp corn starch
• salt and pepper to taste
• 3 tbsp chicken stock
• 1 tbsp milk

Other ingredients:

• 4 tbsp flour
• 1/2 tsp baking powder
• salt to taste
• 1/2 tbsp butter (cubed)
• 3 1/2 tbsp milk
• 1 tbsp chopped herbs

Instructions:

Prepare a microwavable mug.
Add shredded cooked chicken, frozen mixed vegetables, and cornstarch.
Season with salt and pepper to taste.
Mix well.
Pour chicken stock and milk.
Mix until well incorporated.
Set aside.

In a mixing bowl, add flour and baking powder.
Season with salt to taste.
Mix well.
Add cubed butter, milk, and chopped herbs.
Mix until well incorporated.
Pour it over the chicken mixture.
Microwave for 2 minutes and 15 seconds.
Remove from the microwave once done.
Enjoy!

15. Strawberry Cobbler In A Mug

Ingredients:

• 4 tbsp flour
• 1 tbsp sugar
• 1/2 tsp baking powder
• 1/8 tsp salt
• 1 tbsp melted butter
• 2 tbsp milk

Other Ingredients:

• 3/4 cup chopped strawberries
• 2 tbsp powdered sugar

Instructions:

Prepare a mixing bowl.
Add flour, sugar, and baking powder.
Season with salt to taste.
Mix well.
Add melted butter and milk.
Mix until batter is well incorporated.
Set aside.

In a microwavable mug, add chopped strawberries.
Add powdered sugar.
Mix well until sugar is melted.
Add batter on top of the strawberries.
Microwave for 90 seconds.
Garnish with whip cream if you prefer.
Enjoy!

16. 10-Minute Baked Potato In A Mug

Ingredients:

• 1 Russet potato (unpeeled and washed)
• some oil to taste
• salt to taste
• 2 bacon slices
• 1/4 cup cheddar cheese (shredded)
• some sour cream (for garnishing)
• some chopped chives (for garnishing)

Instructions:

Carefully wash an unpeeled Russet potato.
Poke holes using a fork on it.
Coat it with some oil.
Season with salt to taste.
Place it on a microwavable plate.
Add two bacon slices.
Microwave for 7-9 minutes.
Remove from the microwave once done.
Crush the bacon into smaller pieces.
Slice the potato in half.
Use a fork to shred the insides of the potato without removing it from the plate.
Sprinkle some shredded cheddar cheese on it.
Microwave for another 30 seconds.
Remove from the microwave once done.
Top it off with some sour cream, chopped chives, and bacon pieces.
Enjoy!

17. Chocolate Peanut Butter Cake In A Mug

Ingredients:

• 2 tbsp angel food cake mix
• 2 tbsp chocolate cake mix
• 2 tsp peanut butter chips
• 1 tsp chocolate chips
• 2 tbsp + 1 tsp water
• some whip cream (optional for garnishing)
• drizzle of a chocolate syrup (optional for garnishing)

Instructions:

Prepare a microwavable mason jar.
Add angel food cake mix and chocolate mix.
Add water.
Stir to combine.
Microwave for 20 seconds.
Top it off with peanut butter chips and chocolate chips.
Microwave for another 40 seconds.
Remove from the microwave once done.
Top it off with some whip cream.
Drizzle with chocolate syrup if you prefer.
Enjoy!
