7 Delicious Sandwich Recipes For Lunch

Fed up with buying overpriced lunches but still want something stylish? These are NOT ‘quick and easy sandwiches to make in 2 minutes’ and are definitely not “light bites”. This is “big food”… these are more like restaurant-style extravagant creations.

1. Lasagna Subs

Ingredients:

• 5 hotdog buns
• 1/2 cup garlic butter
• 1 tbsp olive oil
• 1/2 cup Pancetta (Italian cured pork belly)
• 1 diced onion
• 3 cloves minced garlic
• 1.8 lb beef mince
• 1 can chopped tomatoes
• 1 glass red wine
• 1 tbsp salt
• 1 tsp pepper
• 1 tbsp tomato puree
• 10 strips Lasagna sheet
• 15 strips Mozzarella
• Grated parmesan
• Finely chopped green onions (optional for garnishing)

Instructions:

Set a skillet over medium heat.
Heat 1 tbsp of olive oil.
Saute 1/2 cup of Pancetta, 1 diced onion, and 3 cloves minced garlic until onion becomes translucent.
Add 1.8 ln beef mince and let it cook until it changes color.
Add 1 can of chopped tomatoes and 1 glass red wine.
Season with salt and pepper.
Add 1 tbsp of tomato puree.
Stir and let it simmer.
Remove from heat.
Set aside.

Make a hollow in the center of the hotdog buns.
Brush garlic butter inside each bun.
Place in a baking dish.
Bake in a preheated oven for 10 minutes at 180 C.
Remove from the oven.
Place one lasagna strip in each hollowed portion of the buns.
Scoop beef mixture and spread n top of the lasagna strip.
Place mozzarella sheet followed by lasagna strip and beef mixture on top.
Place the remaining mozzarella strips on top of each.
Sprinkle with grated parmesan cheese.
Bake for 30 minutes at 180 C.
Remove from the oven.
Garnish with finely chopped green onions.
Serve and enjoy!

2. Ham & Cheese Stuffed French Toast

Ingredients:

• Bread loaf (one thick slice)
• 2 slices Cheddar
• 2 slices Ham
• 3 eggs
• 1 cup cream
• 1 tsp salt
• 1 tsp pepper
• 1 tbsp butter

Instructions:

In a mixing bowl, put 3 eggs and 1 cup cream.
Season with salt and pepper.
Whisk until well combined.
Set aside.

Cut a thick slice of a bread loaf.
Make a slice on the side of the bread without cutting it all the way through.
Sandwich a ham slice in between two cheddar slices.
Put it inside the slice of the bread.
Put the bread on a baking dish.
Pour the egg and cream mixture.
Soak the bread for a few minutes.

Set a frying pan over medium heat.
Melt 1 tbsp butter.
Fry the bread from each side until its golden.
Transfer to plate and cut in half.
Serve and enjoy!

3. Pesto Chicken Sheet Pan Grilled Cheese

Ingredients:

• 1/2 cup pine nuts
• 2 handfuls of basil
• 1 1/2 cups parmesan
• 1 tsp salt
• 1/2 lemon juice
• 3/4 cup olive oil
• 5 shredded cooked chicken breasts
• 12 bread slices
• 1 cup garlic butter
• 3 cups mixed grated mozzarella and cheddar

Instructions:

Put 1/2 cup pine nuts, 2 handfuls of basil, 1 1/2 cups parmesan, and 1 tsp salt in a mixer.
Grind it for a few minutes until it breaks down.
Add 1/2 lemon juice and 3/4 cup olive oil.
Grind until it becomes a pesto.
Add to the shredded cooked chicken breasts.
Mix until well combined.
Set aside.

Brush the bread slices with garlic butter on one side.
Place the slices with the brushed side facing down the baking tray.
Put mixed mozzarella and cheddar following the pesto chicken on top of the bread.
Sprinkle the rest of the mixed mozzarella and cheddar.
Top it off with a bread slice the brushed side facing upward.
Press it down with another baking tray.
Bake for 20 minutes on a preheated oven at 200 C.
Remove from the oven.
Slice into halves and serve.

4. Giant Italian Deli Sandwich

Ingredients:

• 320 ML warm water
• 7 grams yeast
• 2 tbsp olive oil
• 1 tbsp honey
• 500 grams bread flour
• 1 tsp salt

• 2 tbsp olive oil
• 1 tbsp rosemary
• Pinch of salt

• 1/2 cup pesto
• 8 slices mortadella
• 8 slices parma ham
• 3 balls mozzarella
• 1 large sliced tomatoes
• Rocket

• Olive oil

Instructions:

In a container, mix 320 ml warm water, 7 grams yeast, 2 tbsp olive oil, and 1 tbsp honey.
Set aside.

In a separate container, mix 500 grams bread flour and 1 tsp salt.
Add the honey mixture and mix until it becomes a dough.
Knead the dough.
Pour an amount of olive oil in a mixing bowl.
Place the dough and coat with olive oil.
Cover with a clear plastic.
Proof for an hour.

Set a circular and large high-sided baking dish.
Sprinkle 2 tbsp olive oil and spread all over the inside of the baking dish.
Place the dough in the baking dish.
Pour olive oil and coat the dough.
Sprinkle rosemary and salt.
Bake for 25 minutes on a preheated oven at 200 C.
Remove from the oven.
Slice off the top of the bread.
Spread pesto evenly on half of the bread.
Add 8 mortadella slices followed by 8 parma ham slices.
Add 3 balls of mozzarella cheese on top followed by slices of tomato.
Top it off with rocket leaves.
Sprinkle some of olive oil.
Cover it with the other half of the bread.
Slice in servings and enjoy!

5. Chicken Caesar Salad Buns

Ingredients:

• 6 bread rolls
• 1/2 cup melted butter
• 2 cloves minced garlic
• 1 tbsp parsley

• 8 cups shredded cooked chicken
• 1 beaten egg
• 3/4 cup parmesan
• 1 cup ceasar dressing
• 1 tbsp parsley
• 2 cups breadcrumbs
• Oil for frying

• 2 large chopped romaine hearts
• 3/4 cup caesar dressing
• 8 rashers crispy bacon

Instructions:

In a bowl, mix well 1/2 cup melted butter, 2 cloves minced garlic, and 1 tbsp parsley.
Slice bread rolls in half and brush with the melted butter mixture.
Place them in a baking tray.
Bake for 8 minutes at a preheated oven of 180 C.
Remove from the oven and set aside.

In a separate mixing bowl, add 3 cups shredded cooked chicken, 1 beaten egg, 3/4 cup parmesan, 1 cup caesar dressing, and 2 tbsp parsley.
Mix until well combined.
Scoop a mixture and form into a patty.
Coat with breadcrumbs.
Set a frying pan over medium-high heat.
Let oil heat.
Fry the patties until golden brown on both sides.
Set aside.

In a separate mixing bowl, add chopped romaine hearts, 3/4 cup caesar dressing, and 8 rashers crispy bacon.
Mix well.

Assemble the buns.
Sandwich the patty and caesar salad.
Serve and enjoy!

6. Sheet Pan Chicken Caprese Paninis

Ingredients:

• 6 sliced tomatoes
• 2 tbsp olive oil
• 3 tbsp balsamic
• 1 tsp salt
• 1 tsp pepper

• 1/4 cup + 1/4 cup melted butter
• 8 slices white bread
• Mozzarella slices
• 1 cup pesto
• 2 cups shredded cooked chicken

Isntructions:

Place tomato slices on a baking tray.
Sprinkle 2 tbsp olive oil and 3 tbsp balsamic.
Season with salt and pepper.
Mix and coat the tomatoes well.
Bake for 40 minutes at a preheated oven of 160 C.

On a separate baking tray, spread 1/4 cup of melted butter.
Lay 8 white bread slices.
Put mozzarella slices on top.
Spread evenly 1 cup pesto.
Sprinkle shredded chicken followed by the baked tomatoes.
Put mozzarella slices followed by bread slices on top.
Brush with melted butter.
Cover with parchment paper and press it down using another tray.
Bake for 30 minutes at 200 C.
Grill for 5 minutes.
Slice into paninis.
Serve and enjoy!

7. Three-Cheese Cuban Sliders

Ingredients:

• 3 baguettes
• Mustard
• 3 packs of ham
• 3 packs of edam and gouda
• Sliced dill pickles
• 1/4 cup mozzarella
• 1 cube butter

Instructions:

Slice the baguettes in half.
Lay the lower halves on a baking tray.
Spread mustard on each.
Put 3 packs of ham slices followed by 3 packs edam and gouda.
Add sliced dill pickles on top.
Sprinkle with mozzarella.
Put the top half of the baguettes on.
Brush the top with butter.
Cover with parchment paper and press down by using another tray.
Bake for 15 mins at a preheated oven of 180 C.
Remove from the oven.
Serve and enjoy!
