Gazpacho is a cold soup made from raw vegetables that originated in the southern Spanish region of Andalusia. Ingredients:
• 4 large ripe tomatoes
• Half of an English cucumber
• Half a cup of diced red bell pepper
• 1/4 cup of green onion
• 1 large jalapeño
• 2 cloves of minced garlic
• 1 tsp of salt
• Half a tsp of ground cumin
• Pinch of dried oregano
• Cayenne
• Black pepper
• 1 pint of cherry tomatoes
• Juice of 1 lime
• 1 tsp of Worcestershire sauce
• 1 tbsp of balsamic vinegar
• 1/4 cup of extra virgin olive oil
• Fresh basil or cilantro
Instructions:
This recipe takes 10 to 15 minutes to make, The soup needs to set in the fridge for at least 2 hours.
Use a knife to place an X mark at the bottom of the tomatoes.
Remove the core.
Place the tomatoes in boiling water for 30 seconds and let cool.
Once cooled, remove the skins, cut into halves, and squeeze out the seeds.
Dice the tomatoes into small pieces.
Chop the cucumber, red bell pepper, green onion, and jalapeño into small pieces.
In a large bowl, add chopped vegetables.
Season with salt, cumin, dried oregano, and black pepper.
In a blender, place cherry tomatoes, lime juice, Worcestershire sauce, balsamic vinegar, and extra virgin olive oil.
Blend until smooth.
Pour the mixture into the bowl with the chopped vegetables.
Mix well.
Scoop half of the mixture back into the blender. Blend until smooth.
Pour it back to the bowl. Cover with plastic wrap and let it chill in the fridge for at least 2 hours.
Taste and adjust seasoning as preferred.
Serve with chopped basil or cilantro.
