Chinese cuisine offers a wide variety of noodle dishes. Chow Mein, which is one of the signature dishes, is found in every Chinese restaurant across the globe. Although using the same components – egg noodles, meat or seafood, vegetables, sauce, and aromatics – different regions have their own style of cooking Chow Mein.
If you like Chow Mein as your usual Chinese takeout, you will surely love making this at home. The key to a great stir-fried noodle dish is to slice the meat and vegetables thinly. It is not only for quick cooking but also to easily absorb all the flavors from the seasonings and the sauce. Enjoy serving this delicious festive dish to your family and friends.
Ingredients:
• ½ lb chicken breast fillet, sliced thinly
• 3 tbsp cooking oil
• 3 cloves garlic, finely chopped
• 1 tbsp fresh ginger, finely chopped
• 1 red chili, seeded then thinly sliced
• 10 oz precooked Chinese egg noodles
• 2 oz shiitake or button mushrooms, sliced
• ¼ cup of bamboo shoots, sliced
• 4 baby bok choy, cored the quartered
• 3 green onions, cut into 2-inch pieces
• 4 oz. bean sprouts
• 1 tsp toasted sesame oil
• 1 tsp toasted sesame seeds
Marinade:
• 1 tsp soy sauce
• 1 tbsp Chinese cooking wine
• ½ tsp Chinese five spice
• ½ tsp baking soda
• ⅛ tsp black pepper
Sauce:
• 3 tbsp oyster sauce
• ½ cup of chicken stock
Instructions:
This recipe takes about 30 minutes to make. Serves 4 to 6.
Place the chicken in small bowl.
Add all the ingredients for the marinade soy sauce, Chinese cooking wine, Chinese five spice, baking soda, and black pepper.
Mix well and let the chicken marinate for 5 minutes.
In a small bowl, whisk oyster sauce and chicken stock together to make the sauce. Set it aside.
Drizzle 1 tbsp oil in a wok over high heat.
Add marinated chicken pieces and stir-fry for 3 minutes.
Transfer chicken pieces to a plate and set aside.
In the same wok over high heat, pour 2 tbsp oil.
Add garlic, ginger, and red chilies and stir-fry for about 30 to 45 seconds.
Add mushrooms, bamboo shoots, and baby bok choy and stir-fry for a minute.
Add the noodles and pour in the sauce.
Stir-fry for 2 minutes.
Add chicken pieces, bean sprouts, and bamboo shoots and stir-fry for another minute.
Turn off heat.
Transfer stir-fried noodles to a serving plate.
Drizzle toasted sesame oil and sprinkle toasted sesame seeds on top.
Serve.
Ideas And Tips:
• Other vegetables you can add are carrots, Napa cabbage, bell peppers, zucchini, sugar snap peas, broccoli, cauliflower or young corn.
• Instead of chicken, you can also use seafood, beef, pork or Chinese sausage. Or, you may also use a combination of them.
• If you are using dried noodles, follow the packet instructions on how to prepare the noodles. Do not overcook the noodles. They will be too tender and will no longer absorb flavors when stir-fried.
