Ingredients:

Cake:

• 1 cup of all-purpose flour
• 1 tsp of baking powder
• 1/4 tsp of salt
• 2 large eggs
• 1 cup of granulated sugar
• 1 tsp of pure vanilla extract
• Half a cup of whole milk
• 1 tbsp of unsalted butter

Broiled Frosting:

• 1/3 cup of light brown sugar
• 3 tbsp of unsalted butter
• 1/4 cup of cream
• Half a tsp of pure vanilla extract
• Half a cup of dried coconut

Instructions:

Preheat the oven to 350F.
Grease your baking pan by brushing melted butter and coat the pan with flour.
In a saucepan over medium heat, heat the milk and butter. Cover with a lid and set aside.
In a big bowl, whisk together the flour, baking powder, and salt.
Beat eggs, sugar and vanilla extract in a mixer on high speed until the mixture thickens and becomes fluffy.
Slowly add the flour and mix together until smooth.
Pour the hot milk mixture and beat until smooth.
Place the batter on your baking pan and smooth out the top.
Bake in the oven for 25 to 30 minutes.
Let the cake cool on wire rack.
In a saucepan, add all of the ingredients except for the coconut.
Stir over medium heat until it comes to a boil.
Remove from the heat and add coconut.
Pour the hot frosting over the cake while it is still hot.
Place the cake in a broiler until frosting bubbles up and turns brown.
Serve warm.

Ideas And Tips:

• This recipe uses whole milk to add texture to the cake. You can substitute with low-calorie milk, or nut milk (almond milk, soy milk, or coconut milk).

• To check if your cake is cooked, use a toothpick and insert in the middle. If it comes out smooth, your cake is done. If there is batter sticking to the toothpick, it still needs a few more minutes to cook.

• Before cooking, leave the eggs at room temperature. This makes the eggs easier to mix compared to cold eggs straight from the fridge.
