One of our favorite recipes – chicken quesadilla – is simply perfect for an appetizer or snacks! What makes it more savory are the spices mixed and coated on the chicken pieces. Do not forget to make it cheesier with any cheese that you love! Serve with salsa or guacamole as a side dish.
Ingredients:
• 2 chicken breasts (6 oz each, cut into bite-size pieces)
• 4 large tortillas
• 1 tbsp chili powder
• 1 tbsp olive oil
• 1 tbsp unsalted butter
• 1 tsp granulated garlic
• 1 tsp granulated onion
• 1 tsp paprika
• 1/2 tsp dried oregano
• Salt and pepper to taste
• 2 cups shredded cheese of your choice
• Vegetable oil (for brushing on tortillas)
Instructions:
This recipe takes about 30 minutes. Serves 4.
Mix all seasonings – 1 tbsp chili powder, 1 tsp granulated garlic, 1 tsp granulated onion, 1 tsp paprika, 1/2 tsp dried oregano, salt, and pepper to taste.
Coat the chicken bite-size pieces with the seasonings mixture.
Set a skillet over medium heat.
Drizzle 1 tbsp of olive oil and melt 1 tbsp unsalted butter.
Cook the seasoned chicken bite-size pieces for 7-8 minutes or until all chicken pieces are cooked through.
Remove from the skillet and transfer to a plate.
Assemble the quesadilla:
Brush a little amount of olive oil on one side of the tortilla that faces the grill or pan.
Put shredded cheese of your choice on one half of the tortilla, followed by chicken pieces and some shredded cheese on top.
Fold over the tortilla and place on the grill pan.
Let it cook for 3-5 minutes or until the grill marks show up.
Slice into triangles and top it off with salsa or guacamole (optional).
Serve and enjoy!
