Chicken chow mein is one of the most popular Chinese dishes; where noodles are stir-fried with the combination of vegetables and chicken. The only preparation needed is the marination of the chicken which takes about 30 minutes. The cooking of the noodle recipe only takes about 15 minutes and can serve 2.
Ingredients:
For chicken marinate:
• 1/4 tsp salt
• 1/4 tsp pepper powder
• 1 tsp dark soy sauce
• 1 tsp white vinegar
• 1/4 tsp baking soda
• 250 grams boneless chicken (cut thinly to 2-inch strips)
• 150 grams noodles (boiled as per pack instructions)
• 1 cup cabbage (finely sliced)
• 1 cup carrots (julienned)
• 1 cup green bell pepper (finely sliced)
• 5 garlic cloves (sliced)
• 2 tbsp spring onion greens (finely sliced)
• 2 tbsp spring onion whites (finely sliced)
• 1.5 tbsp oil
• Salt and black pepper to taste
• 1 tsp dark soy sauce
• 1 tsp white vinegar
• 2 tsp green chili sauce
• 1 tsp red chili sauce
Instructions:
For Chicken Marinate:
In a container (bowl or plate), put chicken strips.
Add salt, pepper powder, dark soy sauce, white vinegar, and baking soda.
Mix until the chicken is coated well.
Set aside for 30 minutes.
Set a frying pan and heat 1.5 tbsp oil.
Saute garlic.
Add marinated chicken.
Stir over high heat for 3-4 minutes.
Cook until brown.
Add spring onion whites and give a stir.
Add carrots, cabbage, and green bell pepper.
Stir for a 3-4 minutes.
Add salt and black pepper to taste.
Stir for another minute.
Add the boiled noodles and toss to mix.
Add dark soy sauce, white vinegar, green chili sauce, and red chili sauce.
Mix until well combined.
Sprinkle with spring onion greens.
Remove from heat.
Transfer to a plate.
Serve and enjoy!
