Chicken lasagna is a dish made of a stacked layer of lasagne pasta sheet, chicken stuffing, and cheese. Basil, parsley, and oregano are usually added on top as garnishing. This is usually baked and when cooked is cut into square portions for single-serving.
This recipe takes about 1 hour and 30 minutes. Serves 10-12.
Ingredients:
For Chicken Stuffing:
• 1 kg Chicken breast (minced)
• 1 large red bell pepper (chopped)
• 1 large green bell pepper (chopped)
• 1 large yellow bell pepper (chopped)
• 2 medium onions (chopped)
• 2 medium tomatoes (grated)
• 6-8 cloves garlic (chopped)
• 3 tbsp Tomato ketchup
• Salt and black pepper to taste
• Mozarella cheese
• Processed cheese
• 1 tbsp Chilli flakes
• Lasagne sheet
• 1 tbsp Mixed herbs
• 1 cup water
• 3-4 tbsp oil (for frying)
For White Sauce:
• 2 tbsp Butter
• 50 grams All-purpose flour
• 2 tbsp White pepper powder
• 1 tbsp Mixed herbs
• 1 cup milk
Instructions:
For Chicken Stuffing:
Set a large saucepan over medium-high heat.
Add oil and let it heat.
Saute onions and garlic for a minute or until garlic is golden brown.
Add minced chicken breast.
Let it cook for 7-10 minutes or until the meat changes color.
Add grated tomatoes.
Stir until well mixed.
Add tomato ketchup, salt, black pepper, chili flakes, and mixed herbs.
Mix well.
Add chopped bell peppers.
Mix until well combined.
Add water and let it cook for a few minutes.
Set aside.
Boil lasagna sheet for 3-5 minutes or until half-cooked.
Drain and rinse.
Set aside.
For White Sauce:
Set a small pan over medium-high heat.
Melt butter.
Add all-purpose flour.
Mix until well combined.
Pour milk and let it boil.
Add white pepper powder and stir.
Remove from heat.
Mix well.
Add water or milk if required to smoothen texture.
Set aside.
For Assembling Chicken Lasgana:
Preheat oven to 200 C.
Lightly grease a baking dish with oil.
Spread white sauce as the first layer and cover all sides.
Add lasagne sheets on the second layer.
Add chicken stuffing as the third layer and cover all sides.
Put mozzarella cheese and processed cheese on top.
Add another layer of white sauce.
Put another layer of lasagne sheets.
Add the remaining white sauce.
Spread a layer of chicken stuffing.
Sprinkle mozzarella cheese on top.
Bake for 20-25 minutes.
Remove from oven.
Serve and enjoy!
