Beef-and-Potato Burritos Recipe – Martha Stewart

A burrito is a Mexican dish that can be served at any time of the day – breakfast, lunch, or dinner. It consists of a flour tortilla filled with meat and various other ingredients such as onions and jalapenos. Some serve burritos with condiments like guacamole or any dip of your choice. This recipe will show how simple and easy it is to prepare beef and potato burritos for your next meal.


• 1 large baking potato (peeled and chopped)
• 1 large onion (chopped)
• 1 jalapeno chile (finely chopped)
• 3/4 lb ground beef
• 4 flour tortillas (10 inches in diameter)
• 2 tbsp vegetable oil
• 1 1/2 tsp ground cumin
• 2 tsp paprika
• Coarse salt to taste
• 1 can (14 oz) chopped tomatoes with juice
• 1/4 cup sour cream
• 1/2 head iceberg lettuce (shredded)
• 1/4 cup Monterey Jack (grated)
• 1/4 cup freshly chopped cilantro (optional for garnishing)
• 1 lime (wedges for garnishing, optional)


This recipe takes about 30 minutes. Serves 4.

For the filling:
Set a skillet over medium-high heat.
Heat 2 tbsp vegetable oil.
Add chopped potatoes.
Cook and stir occasionally for 6 minutes or until golden brown.
Add ground beef, chopped onion, and chopped jalapeno chile.
Cook and mix well for 4 minutes or until beef is browned.
Add chopped tomatoes with juice.
Season with 1 1/2 tsp ground cumin, 2 tsp paprika, and coarse salt to taste.
Mix well and cook for 6 minutes or until liquid has evaporated.
Remove from heat.
Set aside.

For the tortillas:
Set a dry skillet over low heat.
Heat each tortilla for 10 seconds or until they are lightly browned.
Set aside.

Place the tortilla on a plate.
Spread sour cream at the center.
Add shredded head iceberg lettuce on top of the cream.
Scoop a spoonful of the filling and place it on top of the lettuce.
Top it off with grated Monterey Jack.
You can add freshly chopped cilantro.
You can squeeze lime juice to finish off.
Fold bottom upward.
Fold each side to overlap and just leave the top open.
Serve and enjoy!
