Eating avocados is a very nutritious food. It is packed with fiber and potassium which are good for the body. It has omega-3 fatty acids which are good for the heart. Incorporating it with chipotle will surely twist this dish for a healthy lunch meal.
Ingredients:
• 1 can (15 oz) red kidney beans (drained)
• 8 slices whole-grain bread (toasted)
• 1 avocado (sliced)
• 4 radishes (sliced)
• 4 leaves escarole
• 1 chipotle in adobo (finely chopped added with 1 tsp sauce)
• 1 cup sprouted beans
• Kosher salt
• Freshly ground black pepper
Instructions:
This recipe takes about 15 minutes. Serves 4.
In a large bowl, mash the red kidney beans.
Add chipotle and sauce.
Mash and mix until well combined and texture thickens.
Season with salt.
Set aside.
Assemble the sandwich.
Grab whole grain bread slices.
Spread mixture on top of the whole grain bread bottom.
Put escarole leaves, sprout beans, and radish slices.
Sprinkle some salt and ground black pepper to taste.
Add avocado slices before putting the top bread.
Serve as one piece or cut in half.
