How To Make Latkes

Latkes are potato pancakes usually served with applesauce and sour cream dips. The potatoes are grated together with white onion. These are mixed with beaten eggs and breadcrumbs to get a crispy texture. Add toppings to the latkes if you prefer to give more taste. It is a quick and easy recipe that takes about 30 minutes.

Ingredients:

• 4 large Russett potatoes (peeled)
• 1 small white onion (divided to four)
• 4 eggs
• 1 cup panko breadcrumbs
• some oil for frying
• salt to taste

Instructions:

Grate one potato, followed by a part of white onion.
Repeat this step until all potatoes and white onion are grated.
Transfer to a clean washcloth.
Wrap and squeeze to remove liquid from the potatoes.
Transfer the potatoes into a mixing bowl and set aside.

Save the liquid from the potatoes in a bowl.
Let it sit for 5 minutes.
After 5 minutes, the potato starch should form at the bottom of the bowl.
Pour the liquid into another container.
You will see the starch.
Add four eggs into the bowl with the starch.
Whisk to combine well.
Pour the egg mixture into the bowl with grated potatoes.
Add panko breadcrumbs.
Mix until well combined.
Once thick, get a handful of mixture and form into a ball.
Press it down to form a patty.
Do this with the remaining potato mixture.

Set a large skillet over medium-high heat.
Add oil for frying and heat it.
Once heated, add potato patties in the skillet.
Fry for 4-5 minutes on each side or until crisp and golden brown.
Once done, transfer to a stainless steel rack.
Sprinkle salt and let cool.
Serve with your favorite dips.
