Creamy Chicken Casserole

One of the recipes that should be on your list is this easy and creamy chicken casserole. Your family will be thrilled to have these creamy and savory noodles mixed in seasoned sauce over the weekend. You can add more vegetables to the mix to give it a healthy twist. You can sprinkle additional cheesy toppings for a cheesier and creamier dish for dinner.

Ingredients:

• 12 oz egg noodles (uncooked)
• 1 lb chicken (cooked and diced)
• 1 cup crushed Ritz crackers
• 2 cups milk
• 2 cups chicken broth
• 2 cups frozen peas
• 2 cups cheddar cheese (shredded)
• 2-3 tsp olive oil
• 3 cloves garlic (minced)
• 1/2 white onion (diced)
• 1/4 cup butter
• 1/4 cup parmesan cheese (grated)
• 1/4 tsp black pepper
• 1/4 tsp salt
• 1/4 cup all-purpose flour

Instructions:

Preheat oven to 400 F.

Set a large pot filled with water over medium heat.
Bring to a boil.
Once it boils, add egg noodles and cook according to its package instructions.
Once al dente, drain and rinse the noodles.
Set aside.

Set a saucepan over medium heat.
Melt butter.
Saute diced white onions for 5-7 minutes or until tender.
Add all-purpose flour and minced garlic.
Stir and cook for 1-2 minutes until well combined.
Pour chicken broth and milk.
Season with salt and black pepper.
Stir and bring to a simmer until sauce thickens.
Once it thickens, add frozen peas, shredded cheddar cheese, and cooked diced chicken.
Switch off the heat.
Stir while it’s still hot until well combined and cheese has melted.
Set aside.

Prepare a 9 x 13-inch baking dish.
Slightly grease with oil.
Add the cooked egg noodles into the baking dish.
Pour the sauce mixture on top of the noodles.
Toss until noodles have coated well.
Garnish with a mixture of crushed crackers, grated parmesan cheese, and olive oil.
Place inside the preheated oven.
Bake for 15-20 minutes until the crackers are golden brown.
Remove from the oven.
Serve and enjoy!

Tips and ideas:

You can use frozen mixed vegetables as an alternative for frozen green peas. It gives more color to the casserole.

You can also add other toppings like freshly chopped parsley, depends on what your family would love to top it off.
