Creamy Green Avocado Miracle Pasta (Food Bite)

This miracle pasta recipe uses avocado to make a creamy basil-based sauce. The tasty colorful sautéed vegetables make this dish a complete and healthy meal.

“Edamame” are young soybeans that are still in the pod. These young green beans are soft and edible, unlike the dried mature soybeans that are used to make soy milk and tofu. In Japan, they are boiled in salted water and served as an appetizer. You will also sometimes see them served as a side in Japanese restaurants in the USA. Some grocery stores sell edamame which have been hulled. These hulled soybeans are added to salads, soups or sautéed vegetables.

The taste of edamame is a normal white bean taste. Edamame are rich in protein, healthy fats like omega-3 and alpha-linolenic acids, vitamins E and B-6, thiamin, riboflavin, niacin, pantothenic acid, choline, magnesium, phosphorus, potassium, zinc, copper, and manganese. Edamame also contains phytoestrogens that have been linked to lower the risk of osteoporosis and cancer.

Ingredients:

• 3 7-oz packs of Angel Hair Miracle Noodles (see below for further info on this ingredient)

Sauce:

• 1 medium avocado
• 1/4 cup of lemon juice
• 1 cup of fresh basil leaves
• 2 tbsp of water
• 1/8 tsp salt
• 1/8 tsp pepper
• 1/8 tsp paprika

Sautéed Veggies:

• 1 tsp olive oil
• 3 cloves garlic, chopped
• 1 onion, chopped
• 1 red bell pepper, sliced
• 1 cup frozen and shelled edamame
• 2 roma tomatoes, chopped
• 1/8 tsp salt
• 1/8 tsp pepper

Instructions:

This recipe takes 30 minutes to make. Serves 2 to 3.

To prepare the sauce, place all ingredients avocado, lemon juice, basil leaves, and water in a food processor.
Pulse until you get a smooth paste.
Transfer sauce into a small bowl and season with salt, pepper, and paprika.
To prepare the sautéed vegetables, heat olive oil in a pan over high heat.
Add garlic and onions and stir-fry for 1 minute.
Add red bell peppers and edamame.
Stir-fry for 2 to 3 minutes.
Add tomatoes and cook for 2 minutes.
Turn off heat and lightly season with salt and pepper.
Rinse angel hair noodles and strain excess water.
Put noodles in a bowl.
Add avocado sauce and mix well to completely coat all the noodles.
To serve, put the noodles on a serving plate and top with sautéed vegetables.
