Here is a collection of easy and impressive chicken dinners you can make for family or occasions. Chicken is an ingredient that can be cooked in various ways – fried, grilled, or baked. You will enjoy these chicken dinner recipes – from stuffed chicken parmesan to chicken piccata.

1. Stuffed Chicken Parmesan

Ingredients:

• 3 chicken breasts (boneless and skinless)
• salt to taste
• 1 cup mozzarella (grated)
• 2 cups flour
• 6 eggs (beaten)
• 2 cups breadcrumbs
• 1 cup oil (for frying)
• 3 cups tomato sauce
• 1/2 cup parmesan cheese (grated)
• 2 tbsp basil (chopped)

Instructions:

Season chicken breasts with salt.
Make a butterfly cut on each one.
Stuff each with grated mozzarella cheese.
Press the edges to seal the cut.
Prepare flour, beaten eggs, and breadcrumbs in three separate bowls.
Dip each chicken breast in the flour, followed by egg wash.
Coat with breadcrumbs.
Set aside.

Set a frying pan over medium heat.
Add oil and let it heat.
Fry the coated stuffed chicken breasts until both sides are golden brown.
Remove from the pan and set aside.

Prepare a baking dish.
Spread half of the tomato sauce on the bottom of the dish.
Add the fried stuffed chicken breasts next.
Top each chicken with the rest of the tomato sauce.
Sprinkle with grated parmesan cheese and chopped basil.
Place inside the oven and bake for 20 minutes at 350 F.
Remove from the oven.
Serve and enjoy!




2. Orange Chicken

Ingredients:

• 3 chicken breasts (boneless and skinless)
• 1/4 cup soy sauce
• 2 tbsp orange juice
• 1/4 cup cornstarch

• 2 tbsp oil
• 3/4 cup orange juice
• 1 tbsp soy sauce
• 1 tbsp hoisin sauce
• 1 tbsp rice vinegar
• 2 tbsp brown sugar
• 1 tbsp cornstarch

Instructions:

Cut the chicken breasts into bite-sized cubes.
Marinate in a mixture of soy sauce, cornstarch, and orange juice.

Set a skillet over medium-high heat.
Add oil and heat it.
Add the marinated chicken into the skillet.
Cook until chicken is golden brown.
Add orange juice, soy sauce, hoisin sauce, rice vinegar, brown sugar, and cornstarch.
Stir and cook until sauce thickens.
Remove from the heat.
Serve with rice and steamed vegetables.

3. Chicken Alfredo Penne

Ingredients:

Chicken:

• 2 tbsp butter
• 1.5 lbs chicken breasts (boneless, skinless, and cut into bite-sized cubes)
• 1/2 tsp salt
• 1/2 tsp pepper
• 1/2 tsp oregano
• 1/2 tsp basil

Sauce:

• 2 tbsp butter
• 4 cloves garlic (minced)
• 3 tbsp flour
• 2 cups milk
• 1/2 tsp salt
• 1/2 tsp pepper
• 1/2 tsp oregano
• 1/2 tsp basil
• 1/2 cup parmesan cheese (grated)

• 1/4 cup parsley (finely chopped)
• 1/4 cup parmesan cheese (grated)
• 16 oz penne pasta (cooked)

Instructions:

Chicken:

Set a large pan over medium heat.
Melt butter.
Add bite-sized cubes of chicken.
Season with salt, pepper, oregano, and basil.
Stir and cook for 8-10 minutes until the chicken has cooked.
Remove from the pan and transfer to a bowl.
Set aside.

Sauce:

In the same large pan, melt butter.
Saute minced garlic for 30 seconds until garlic is fragrant.
Add flour and stir to combine.
Add milk gradually while stirring until sauce thickens.
Season with salt, pepper, oregano, and basil.
Stir to combine.
Add grated parmesan cheese.
Stir until cheese melts.

Assembly:

Transfer sauce to a bowl of cooked penne pasta.
Add the cooked chicken.
Mix well to combine.
Serve and enjoy!

4. Butter Chicken

Ingredients:

• 2 lbs chicken breast (boneless, skinless, and sliced into cubes)
• salt and pepper to taste
• 1 tsp chili powder
• 1/2 tsp turmeric
• 2 tbsp butter (for frying chicken)

• 4 tbsp butter (divided)
• 1.5 cups yellow onion (sliced)
• 3 tsp Garam masala
• 1 tsp chili powder
• 1 tsp cumin
• 1 tsp cayenne pepper
• 1 tbsp grated ginger
• 3 cloves garlic (minced)
• 3-inch cinnamon stick
• salt and pepper to taste
• 14 oz tomato sauce
• 1 cup water
• 1 cup heavy cream

Instructions:

Put cubed chicken breasts in a bowl.
Season with salt, pepper, chili powder, and turmeric.
Mix well to combine.

Set a large pot over medium heat.
Melt butter.
Add seasoned cubed chicken breasts and cook until browned.
Remove from the pot and transfer to a bowl.
Set aside.

In the same pot, melt butter.
Add sliced yellow onions.
Season with Garam masala, chili powder, cumin, cayenne pepper, grated ginger, minced garlic, cinnamon stick, salt, and pepper.
Stir to combine.
Add tomato sauce.
Stir the mixture and bring to a simmer.
Add water and heavy cream.
Mix well to combine.
Add the cooked chicken into the sauce mixture.
Cover the lid and simmer for 10-15 minutes.
Once it simmers, add butter.
Mix well to combine.
Remove from the heat.
Serve with cooked rice.

5. Chicken Fajita Bowl

Ingredients:

• 1 red bell pepper (sliced)
• 1 green bell pepper (sliced)
• 1 yellow bell pepper (sliced)
• 1 yellow onion (sliced)
• 2 lbs chicken breasts (sliced)
• 2 tbsp taco seasoning
• salt and pepper to taste
• 4 cloves garlic (minced)
• juice of a lime
• 1 can diced tomatoes

For garnishing:

• sour cream
• freshly chopped cilantro
• shredded mixed cheese
• guacamole

Instructions:

Prepare a pot.
Add half of the sliced bell peppers and white onion.
Place the chicken breasts next.
Season with taco seasoning, salt, and pepper to taste.
Add minced garlic, juice of half a lime, and diced tomatoes.
Add the remaining half of the sliced bell peppers and white onion.
Add juice of half a lime.
Cover the pot.
Cook on high for three hours.
After three hours, remove the chicken and shred.
Put the shredded chicken back in the pot.
Give it a mix and cover the pot until heated.
Serve with cooked rice and garnish with sour cream, guacamole, freshly chopped cilantro, and shredded mixed cheese.

6. One-Pan Basil Halloumi Chicken

Ingredients:

• 8 oz halloumi cheese
• 2 tsp salt
• 2 tsp black pepper
• 1/3 cup olive oil
• 2 cartons cherry tomatoes
• 2 chicken breasts
• 4 large basil leaves

• 3 cloves garlic
• 1 tsp salt
• 1 tsp black pepper
• juice of 1/2 lemon
• 1/3 cup olive oil
• 2 large handfuls of basil leaves

Instructions:

Slice halloumi cheese into four equal portions.
Set aside.

Preheat oven to 350 F.

Prepare a large plastic bag or ziplock bag.
Add salt, black pepper, and olive oil in it.
Add the cherry tomatoes and chicken breasts.
Seal and massage to season them well.
Once done, transfer to a foil-covered baking tray.
Put large basil leaves on each chicken breast.
Top it off with sliced halloumi cheese.
Place inside the oven and bake for 15 minutes.
Broil for another 10 minutes.
Remove from the oven and transfer halloumi chicken to a plate.
Set aside.

Bake the cherry tomatoes again for 10 minutes at 350 F.
Remove from the oven after 10 minutes and set aside.

Prepare a blender.
Add garlic cloves, salt, black pepper, juice of 1/2 lemon, and olive oil.
Blend to combine.
Add two handfuls of basil leaves.
Blend again to combine until it becomes a sauce.

Serve halloumi chicken with baked cherry tomatoes.
Drizzle the basil sauce on top of the chicken.
Enjoy!

7. One-Pot Chicken Chow Mein

Ingredients:

• 1/3 cup soy sauce
• 1 tbsp ginger (chopped)
• 1 tbsp garlic (minced)
• 1 tbsp oyster sauce
• 1 tbsp sesame oil
• 1 tbsp sugar
• 1/4 tsp red pepper flakes
• pepper to taste
• 2 chicken breasts (skinless, boneless, and cubed)

• sesame oil
• 1/2 white onion (sliced)
• 3 celery stalks (sliced)
• 4 carrots (julienned)
• 3 cups cabbage (chopped)
• 2 packs Ramen noodles
• 1.5 cups chicken broth

Instructions:

In a bowl, add soy sauce, chopped ginger, minced garlic, oyster sauce, sesame oil, sugar, red pepper flakes, and pepper to taste.
Mix well to combine and set aside.

Put cubed chicken breasts in a ziplock bag.
Add half of the sauce into the ziplock.
Set aside the remaining half of the sauce.
Seal and massage chicken.
Marinate for an hour.

Set a large pot over medium-high heat.
Add the marinated chicken and cook until browned.
Remove from the pot and transfer to a bowl.
Set aside.
In the same pot, add a little bit of sesame oil.
Add sliced white onion and celery stalks.
Add julienned carrots and chopped cabbage.
Stir and cook until carrots are tender.
Add two packs of Ramen noodles and chicken broth.
Cover the lid and let it simmer for 5 minutes.
Mix to break the noodles, then add cooked chicken and the rest of the sauce.
Mix well to combine.
Remove from the pot and transfer to a bowl.
Serve and enjoy!

8. Chicken Piccata

Ingredients:

• salt and pepper to taste
• 1 large chicken breast (boneless and skinless)
• flour (as needed)
• 3 tbsp butter
• 1/2 cup chicken broth
• juice of a lemon
• 2 tbsp capers

Instructions:

Slice chicken breast in butterfly cut.
Pound it using a meat mallet.
Season with salt and pepper to taste.
Coat with flour and shake to remove excess four.
Set a skillet over high heat and melt butter.
Fry chicken breast for 3-5 minutes on each side or until golden brown.
Remove from the skillet and transfer to a plate.

In the same skillet, pour chicken broth.
Add juice of a lemon and capers.
Stir and let it simmer until it reduces a little.
Add the chicken breast back into the skillet.
Spoon sauce over chicken breast.
Remove from the heat.
Transfer to a plate and serve with cooked rice and steamed vegetables.
