Start your day with these healthy no-bake energy bites or prepare them in advance for a light travel snack! The classic energy bite has base ingredients such as rolled oats and shredded coconut formed into a bite-sized ball. There are three delicious flavors you can add to your energy bites – lemon blueberry, peanut butter chocolate, and orange cranberry.
1. Lemon Blueberry
Ingredients:
• 1 cup Medjool dates (pitted and soaked)
• 1 cup rolled oats
• 1/4 cup shredded coconut (unsweetened)
• 1/2 cup dried blueberries
• zest of a lemon
Instructions:
Soak Medjool dates in warm water for 15 minutes.
Drain and put it in a food processer.
Add rolled oats and unsweetened shredded coconut.
Add dried blueberries and zest of a lemon.
Pulse until the mixture is smooth and well combined.
Scoop from the mixture and form into bite-sized energy balls.
Place them on a parchment-lined baking sheet.
Put inside the fridge to chill.
Serve and enjoy!
2. Peanut Butter Chocolate
Ingredients:
• 1 cup Medjool dates (pitted and soaked)

• 1/4 shredded coconut (unsweetened)
• 1/2 cup peanut butter
• 3 tbsp cocoa powder
• 1/4 cup peanuts
Instructions:

Add peanuts, peanut butter, and cocoa powder.
Pulse until the mixture is smooth and well combined.

3. Orange Cranberry
Ingredients:

• 1/2 tsp cinnamon
