These low-fat vegan recipes are perfect if you are trying to lose some weight. The recipes are delicious, healthy, oil-free and fat-free.

1. Easy Vegan Dal

• Juice of half a lemon
• 1 tsp of turmeric
• 1 tsp of curry powder
• 1 tsp of cumin
• 1 pinch of cayenne pepper

Instructions:

This recipe takes about 40 minutes to make. Serves 2 to 3.

In a pot, add all of your ingredients except for the cilantro.
Cook over high heat until it comes to a boil.
Cover with a lid and simmer over low heat for 30 minutes.

2. Spicy Red Lentil Chili

Ingredients:

• 2 red peppers, diced
• 1 diced onion
• 5 minced garlic cloves
• 2 cups of red lentils
• 7 cups of water
• 1 tbsp of chili powder
• 1 tbsp of paprika
• 1 tsp of cayenne
• 1/4 cup of brown sugar
• 2 tbsp of apple cider vinegar
• 1 can of tomato paste (6oz)
• 1 can of diced tomatoes (14oz)

Instructions:

This recipe takes about 30 minutes to make. Serves 3 to 4.

Put all of the ingredients in an Instant Pot.
Set it to manual, and change the time to 17 minutes. Change these settings before sealing the lid.
Once the timer sets off, let the cooker naturally release for 15 minutes.

3. Fiesta Salad

Ingredients:

• 1 can (15oz) of black beans
• 1 can (15oz) of kidney beans
• 1 can (15oz) of cannelloni beans
• 1 yellow bell pepper
• 1 red bell pepper
• 10oz pack of frozen corn kernels
• 1 red onion
• 1/4 cup of fresh cilantro
• Half a cup of red wine vinegar
• Juice of 1 lime
• 2 tbsp of maple syrup
• 1 clove crushed garlic
• 1 tbsp of cumin
• Half a tbsp of crushed red pepper
• Half a tsp of chili powder

Instructions:

This recipe takes about 5 minutes to make. Serves 2.

Add all of the ingredients in a bowl and mix well. Season according to preferred taste.

4. Oil-free Hash Brown Rounds

Ingredients:

• 2 potatoes
• Half a tsp of onion powder
• Half a tsp of garlic powder
• Half a tsp of paprika
• 1/4 tsp of salt

Instructions:

This recipe takes about 30 minutes to make. Serves 2.

Preheat the oven to 450F.
Shred or grate the potatoes.
Season with onion powder, garlic powder, paprika, and salt.
Form potatoes into a ball and then flatten them. Place on a nonstick baking tray.
Bake for 10 minutes, flip them over and cook for another 10 minutes.

5. General Tso’s Vegan Chik’n

Ingredients:

• 1 cup of flour
• 1 cup of water
• Half a head of cauliflower
• 2 cups of bread crumbs

Sauce:

• 3 cloves of minced garlic
• 1 inch of minced ginger
• Half a cup of Hoisin Sauce
• 1/4 cup of rice vinegar
• 3 tbsp of soy sauce
• 1 tsp of red pepper flakes
• 1 tsp of sriracha

Instructions:

This recipe takes about 60 minutes to make. Serves 2 to 3.

Preheat oven to 450F.
Mix flour with water.
Dip cauliflower florets into the batter and coat with breadcrumbs.
Place cauliflower on parchment paper on a baking tray.
Bake for 30 minutes.
Mix all of the ingredients to make the sauce.
Coat the baked cauliflower in the sauce. Place back in the oven for 15 minutes.
