French Dressing + Raw Vegan Fruiting Vegetable Salad

You can prepare a quick, easy, and healthy raw vegan fruiting vegetable salad for lunch in less than 15 minutes. You can add more fruits or vegetables to your preference. You can also adjust the flavors according to your taste.


• 5-6 dates
• Juice of one lime
• smoked paprika
• chipotle powder
• 3 cloves of garlic
• 1/2 cup of water (more or less depending on the consistency you like)

• 1 large cucumber
• 2 Spring onions
• 2 large red bell peppers
• 2 medium tomatoes
• A bunch of cherry tomatoes
• 1 cup of arigula (or any green you want like kale)

• Salt to taste
• Crushed oregano


In a blender, put 5-6 dates, 3 cloves of garlic, smoked paprika, and chipotle powder.
Pour juice of a lime and half a cup of water (more or less depending on the consistency you want to achieve for your dressing).
Blend for a few minutes until you reach the consistency you want.
Pour into a sauce bowl.
Set aside.

Chop all the the vegetables.
Put them in a mixing bowl.
Mix them up.
Add the dressing.
Mix until well combined.
Add salt and crushed oregano to taste.
Serve and enjoy!
