Gnocchi is a dough dumpling entrée originating from Italy. The dough is a combination of mashed potatoes, beaten eggs, and flour. It is formed into bite-sized pieces and dressed with different sauces. In this recipe, gnocchi is served with tomato sauce.
Ingredients:
• 1 kg potatoes (unpeeled)
• 1 egg
• 1-2 tsp salt
• 1/4 tsp pepper
• 1/4 tsp grated nutmeg
• 1.5-2 cups all-purpose flour
• 2-3 tbsp olive oil
• 1 yellow onion (chopped)
• 2 cloves garlic (crushed)
• 800 grams tomato sauce
• 8-10 basil leaves (chopped)
• 1 tsp dried oregano
• 1/4 cup pasta water
• some grated parmesan cheese (optional for garnishing)
Instructions:
Set a pot over medium-high heat.
Place the potatoes in the pot.
Cover it with water.
Bring to a boil.
Once it boils, reduce to medium-low heat.
Cover the lid and let it simmer until the potatoes are tender.
Once tender, remove from the pot and transfer to a bowl.
Let it cool.
Peel off the skin and mash the potatoes.
Transfer to a working surface and create a space in the middle of the mashed potatoes.
Crack open an egg into it.
Season with salt, pepper, and grated nutmeg.
Mix until well combined.
Add all-purpose flour.
Knead the mixture until smooth.
Divide the mixture into 4 portions.
Roll out one portion into a 1-inch wide dough rope.
Do with the rest of the dough portions.
Cut into half-inch squares to make the gnocchi.
Set aside.
Set a skillet over medium-high heat.
Add olive oil and heat it.
Saute chopped onion for 4-5 minutes until soft.
Add crushed garlic cloves and saute for 2 minutes.
Add tomato sauce and stir to combine.
Add chopped basil leaves and dried oregano.
Stir to combine.
Let it simmer for 5-10 minutes.
Meanwhile, cook the gnocchi in a pot of boiling water.
Once gnocchi floats, they are done.
Remove from the pot and transfer to a plate.
Set aside water.
Add the cooked gnocchi into the sauce mixture.
Carefully mix to combine for 1-2 minutes.
Add pasta water and stir to combine.
Let it simmer for a minute.
Remove from the heat and transfer to a plate.
Garnish with some grated parmesan cheese.
Serve and enjoy!
