Healthy South American Brunch

South American cuisine is influenced by Native American, Spanish, African, South Asian, and European food. Their food is filled with spices, herbs, and fresh produce.

This recipe is a beautiful combination of South American flavors. It is savory, spicy, and crunchy. Quinoa is a healthy grain packed with protein, fiber, and iron. It is partnered with crunchy black beans and topped off with eggs. Herbs and spices enhance the flavors to make this a complete and delicious brunch.

Ingredients:

• 200 grams of quinoa
• 1 red chili
• 1 jalapeno
• 1 tomato
• 200 grams of cherry tomatoes
• 1 spring onions
• Olive oil
• Pinch of cumin seeds
• 1 can (400 grams) of black beans
• 2 tbsp of white wine vinegar
• Pinch of sugar
• Extra virgin olive oil
• Half of a lemon
• 6 eggs
• 1 avocado
• Half a bunch of mint
• Half a bunch of fresh coriander
• Hot chili sauce

Instructions:

This recipe takes 30 minutes to make. Serves 6.

Cook the quinoa according to package instructions.
Season quinoa with salt.
Slice chilies and tomato thinly.
Slice cherry tomatoes into quarters.
Chop spring onions.
Place a pan over high heat and drizzle olive oil to cover the pan.
Fry cumin seeds for 30 seconds.
Fry the beans for 5 to 8 minutes. Add oil when needed.
Season with salt.
Drain the quinoa and spread out on a tray to slightly cool.
Place cooked beans in a bowl.
Add olive oil to the pan again and cook eggs for a few minutes depending on your preference.
Scoop quinoa onto to a serving plate.
Place eggs on top and beans on the side.
Garnish quinoa with sliced avocado, tomatoes, chilies, spring onions, mint, and coriander.
Drizzle with extra virgin olive oil and hot chili sauce.

Ideas And Tips:

• You can reduce or increase the amount of spice in this recipe based on your preference. Another ingredient that you can add is cheese to add saltiness and creaminess.
